nobody is irrelevant. nobody is invisible. your neighbors know your name and see you set off to school or work or the backyard everyday, sometimes with a spring in your step and sometimes with hunched over shoulders. there was this one time some stranger pointed you out to their friends and said “that’s the haircut I want” or “I have that shirt, too” or “they go to my school”. someone has admired the way you carry yourself or gave a presentation or even the way you’re so polite when you first meet a person. you’ve made comments or jokes that have stuck in minds of overhearers and eavesdroppers. when old classmates of yours think back to kindergarten or fourth grade or sophomore year they remember you and have an opinion of you. you’ve made recommendations of songs and restaurants and even cookie brands and actually introduced people to their all-time favorites. the cashier at the grocery store knows exactly what laundry detergent your household uses, or even if you don’t do your laundry at all.

Just recently found out I’ll be seeing an endocrinologist for gestational diabetes. So... I’ve changed up my way of eating and am staying below 30g carbs per day. Also walking on the treadmill for 30 minutes per day. This is only day 3 but I’m feeling great!

Keto Italian Dinner
Ricotta Bake
16 oz of Ricotta Cheese
1 cup grated Parmesan
2 large Eggs, beaten
2 teaspoons Italian Seasoning
Salt & pepper to taste
1 cup Marinara Sauce
1 cup shredded Mozzarella Cheese
1 cup mini pepperoni (optional)
Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in an oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes.
8 ½ cup servings
250 calories 5 carbs 19 grams protein
Low Carb Breadsticks
1 ½ cup almond flour
1 tbsp baking powder
2 ½ cup Mozzarella cheese (shredded)
2 oz Cream cheese (cubed)
2 large Eggs (beaten)
Mix mozzarella cheese and cream cheese together. Microwave for 1 minute, then mix and microwave a second minute. Mix well. Mix in flour and baking soda and knead into a dough. Spread out on parchment paper and spread it into a flat sheet. Slice into 8 breadsticks. Bake for 10-12 minutes. Brush with garlic butter.

I usually post quick and easy recipes, but this recipe is a little more involved. Not hard but not fast. However, I have been craving Italian Wedding Soup like crazy!
Before I went low carb I ate this soup multiple times a week (Bought from a store). But being on low carb I wanted to ensure that it was as low carb as possible (no bread in the meat balls, no pasta. This is the first time I ever made it and I can tell you it won’t be the last!
Ingredients: *1 Pound of Ground Beef *1 Egg *6 Cups of Chicken Broth *1 Cup of Beef Broth *1 Bunch Escarole (or 2 cups Spinach), Sliced Thin *1 Pint of Mushrooms, Quartered *½ Carrot (or 3-4 Baby Carrots), Diced *½ Small Onion, Diced *2 Teaspoons Parsley, Separated *2 Teaspoons Basil (I used a combination of dried and fresh as it was all I had) *2 Teaspoons Garlic Powder, Separated *2 Cloves Fresh Garlic, Minced *1 Teaspoon Celery Salt *1 Teaspoon Pepper *2 Teaspoons Dried Oregano, Separated *2 Bay Leaves
Instructions: *In a large crock pot add all the broth, turn on low. *Add the quartered mushrooms and all of the Basil, Celery salt, and the bay leaves. Also add in 1 tsp of the Parsley, 1 tsp of the oregano, and 1 tsp of the garlic powder and cover while you prep the rest of the food. *In a large frying pan add olive oil and sweat the diced onions, with the fresh garlic, and carrots. Add them to the crock pot afterwards. (You can drain them or add the oil with them to the soup, we personally like the oil, it adds flavor and fills us up with out added carbs). *In a large bowl take the meat and mix it with the raw egg, and the remaining Parsley, garlic powder, and oregano, along with the Pepper. *Once they are mixed together roll them into little meatballs. I made mine the size of my thumb nail. (This part took a while). *Once all the meat is rolled into little balls, brown them on all sides in a large frying pan. (you don’t need to cook them all the way through, they will cook in the soup). Add them to the crock pot. (You can also bake them on 350 for a few minutes to help them retain their shape in the soup, instead of frying them. Just make sure they are browned before adding them) *Continue to cook on low for 6-8 hours. Or bump it up to high for another 3-4 hours. *Add the escarole during the last hour, and taste to see if salt needs to be added. *Enjoy!!!
This recipe is usually served with pasta but without it it’s perfectly low carb! You can add miracle rice to give it an extra oomph or some low carb pasta. Honestly, it does not need it because this soup was the BOMB! I will be making this a lot!!!! I will be prepping the meatballs and freezing them to make this soup a little quicker and easier. I would eat this every day in the winter!!
Oh, this soup would also be great with some celery but I was out of it. Just slice it and sweat it with the onions, garlic, and carrots.

Keto banana bread
Dry bowl: 2 cups Golden Flax Meal (I grind it even more with a coffee grinder) 2 tbs baking powder 1/8 tsp salt
Wet bowl: 2 whole eggs ½ cup water 1.5 tbs butter 1 tsp banana extract Chilled stainless steel bowl with chilled mixer beaters (Put the bowl & the beaters in the fridge for 20 minutes)
1 cup Egg whites 2 tbs of Truvia Several dashes of Cream of tartar
This ^^ is the time consuming part. You’ll need to beat & stir the egg whites and slowly add the Truvia/sugar and throw in dashes of cream of tartar. Be prepared to be clanging this steel bowl with the hand mixer for 5-6 minutes total mixing time.
You’ll know when you’re done, because you’ll be able to turn the bowl upside down and the egg whites (will look like whipped cream) won’t budge. STIFF PEAKS!
Add your dry bowl to your wet bowl. Mix it in just enough.
Next, start to spatula in your whipped egg whites. Start folding them in.
When they’re all folded in, dump it into a bread pan.
Set the oven for 350 and put in for an hour.
That’s a low-carb Banana bread that has some RISE to it.
Fat: 8g Protein: 7g Net Carbs: 3g

Ingredients:
3 eggs 3 TB spoons ground flaxseed 1 Cup hot water 1 Cup Greek yogurt 1 Cup ground Almond 60g Psyllium Husk 10g Baking powder 1 tsp salt Seeds of your choice 3 cups of Kale/Spinach (optional ) Heat oven to 160C /320F

Instructions
-Add 3 Tablespoons of flaxseed in small bowl add water and leave for about 3 minutes until runny like eggs -Add all wet ingredients to large mixing bowl then add the flaxseed mix -Add all dry ingredients and use and electric mixer to mix then you can add 3 cups of chopped greens like Kale, spinach (optional) -Mix well and place in oven for 60 minutes.
- keep in refrigerator - enjoy toasted
————— I have used 6 eggs in previous recipes but I have found that the egg smell was to strong, flaxseed could be used as an egg substitute and it has net carbs. Once you have tried this recipe you can add different ingredients to your taste and soon you will enjoy baking low carb breads Enjoy 😊
