Pepperoni Bacon and Jalapeño low carb lavash bread pizza
The jalapeño popper burger! The burger is stuffed with grilled jalapeños and cream cheese and topped with hatch green Chile Monterrey Jack Cheese, BAAAACCCON and served with guacamole and chipotle mayonnaise.
Mexican Zucchini Lasagna
Ingredients:
3 large Zucchini 2 15 ounce cans crushed tomatoes 2 pounds of ground beef or turkey 14 ounces of requeson, Mexican style ricotta cheese 2 eggs 4 cups of shredded Mexican blend cheese 1 can of rotel diced chilis 1 7.5 ounce can salsa de chipotle Salt, pepper, cumin, garlic powder, onion powder
Directions:
Slice the Zucchini into thin strips on a mandolin or use a vegetable peeler. Place on paper towels, lightly salt, and set aside. This will draw moisture out of the Zucchini. Press down on them with more paper towels before assembly to get as much of the moisture out as possible.
Make the sauce:
Brown the ground beef and season with equal parts salt, pepper, garlic and onion powder, and cumin. You can use a prepackaged taco seasoning if you like. Drain the fat, add rotel, and one and a half cans of the crushed tomatoes. Set the other half aside. Add chipotle sauce. If you don’t like spice just add half or omit it completely. Let simmer ten to fifteen minutes.
Mix the requeson with 2 eggs and 2 cups of shredded Mexican cheese.
Assembly:
Put the remaining crushed tomatoes in 13x9x2 inch baking pan. Put a layer of Zucchini in the dish. Add a layer of meat sauce and requeson mixture. Place another layer of Zucchini and cover with the rest of the meat and cheese mixture. Add one more layer of Zucchini and top with shredded Mexican cheese and any of the meat sauce remaining.
Bake covered for 45 minutes in an oven preheated to 325 degrees. Uncover and bake for 20 more minutes. Broil on high for 5 minutes.
Let rest 10 to 15 minutes before serving.
