Strictly Vegan Fresh Jamaican Fare is on Its Way to Santa Cruz!
Strictly Vegan, the culinary creation of Jamaican-born Leonie McDonald, is one of my favorite places to eat at festivals, and I'm looking forward to getting in line to have some of her delicious Jamaican vegan fare this weekend.
Not even close to being a vegan? It doesn't matter. McDonald puts intention and love into her cuisine and you can taste it!
Black-eyed peas, baby greens, shredded romaine, salsa, avocado and veganaise wrapped in a whole wheat tortilla and drizzled with homemade ranch dressing. Stir-fried brown rice, fried plantains, assorted grilled veggies. It's all good. Really good! She uses Ziggy Marley's Organics COCOMAN Coconut oils, grapeseed, olive and vegetable oils for frying, and you can taste the difference.
What's on the menu for this weekend? Here's a few to start with:
DAILY SPECIAL
Curried tofu, brown rice & beans, green salad, tropical salsa and avocado.
REGGAE WRAP
Curried tofu, black beans, spring mix, avocado, quinoa, tropical salsa drizzled with vegan ranch dressing and wrapped in an extra large tortilla.
ONE LOVE SALAD
Curried tofu, black beans, spring mix, quinoa, tropical salsa, avocado, drizzled with vegan dressing.
GLUTEN-FREE BOWL
Quinoa, brown rice & beans, green salad, tropical salsa and avocado.
What is Vegan Food Anyway?
A vegan diet typically excludes meat, eggs and dairy products and all other animal-derived ingredients. Many vegans also do not eat foods processed using animal products, such as refined white sugar.
Why Vegan?
McDonald, whose business has been thriving since 2009, suffered from asthma and other health problems as a child. Making the decision to create a healthier lifestyle, she cut meat and dairy out of her diet. Soon after, many of her health problems disappeared. Then she made a trip to her homeland, Jamaica, and saw something new.
Watching the way people cooked with fresh ingredients and herbs, visiting people who had been on a natural diet for fifty years, raising their own chickens and fresh vegetables, she noticed that it made a difference in their health and their energy. When she returned to California, she was ready to create new healthy recipes. Soon, her Strictly Vegan business was born.
You'll catch her at the Church Street Fair this weekend, but visit www.strictly-vegan.com to find out where she will be in the coming months.
