good omens 3 spoilers-
i think an interesting way to contextualize the "annihilation" crowley and aziraphale pick is to think about pterry's understanding of death:
"No one is finally dead until the ripples they cause in the world die away, until the clock wound up winds down, until the wine she made has finished its ferment, until the crop they planted is harvested. The span of someone’s life is only the core of their actual existence."

crowley and aziraphale wind up the clock of this new universe, they give that world the time to exist as it is. their fingerprints are on the dinosaurs, on the languages and the stars. the universe of asa and crowley exists because aziraphale and crowley loved each other-- because humanity taught them how. their first love was the world, and all they wanted was to be a part of it rather than a pawn in the ineffable game of Her devising. in this way, they exist. their wine is still fermenting, if you will.
