#Whole30 Day 2 complete! New take on a Spanish tortilla for breakfast, with blueberries and cinnamon instead of potatoes/onions - and some leftover sweet potatoes from last night. Lunch was a simple onion soup with olives and a banana on the side. For dinner, I made tortillas out of plantains and made tacos with guacamole, lettuce, fresh and jarred salsas, and jalapeños. Had a bit of a headache after the gym, but was fine after some water. Overall feeling good so far! #VegetarianWhole30 #JanuaryWhole30

Started #JanuaryWhole30 today, and feeling good so far! My #VegetarianWhole30 will give me an opportunity to try out some new vegetable dishes which I'm very excited about. Breakfast was a vegetable omelette with tomatoes, green peppers, jalapeños, cayenne pepper, and garlic with a banana and some grapes. Lunch was kale salad with tomatoes, carrots, raisins, almonds, balsamic vinegar, and olive oil. Dinner is roasted sweet potatoes, broccoli, and carrots with some ghee and garlic, and a some pistachios. I even set aside some almonds aside to soak so I can make my own almond milk tomorrow, and made it out for a run even though it was cold and the gym was closed. #Whole30 will be a challenge, but so far so good! Here's hoping that the coming carb flu is forgiving.
