๐โโ๏ธ๐ฐThe main ingredient of Okchun Cookie (์ฅ์ถ๋ง ์ฟ ํค, okchunmat kuki) is ์ฅ์ถ okchun, a traditional Korean confection.
How is okchun made? Before the proper introduction of sugar to Korea, rice flour was used to make the base of okchun, but after the Japanese colonial period, okchun is now mainly made from sugar & starch syrup. These two ingredience are mixed together and heated until it becomes a thick molten mass. As it cools, small pieces are cut from the main mass and different dyes are mixed into each piece. The larger mass is stretched and worked until it becomes fluffy and white. The small colored pieces are rolled into strips and wrapped into the larger mass. A long strip is worked from the resulting dough and cut into pieces.
How is okchun enjoyed? It is pressed into round circles or simply left as small pillow-shaped cuttings, is often flavored with mint or sesame, and served with tea.
Culture check. Neatly stacked piles of okchun are served during important ceremonies, such as a milestone birthday, marriage, funeral, or wedding. In hanja, it is written as ็ๆฅ็ณ (okchun-dang) which means "spring jade candy."
Fun fact! Located in central South Korea is a geological designation called the Okchun Metamorphic Belt, which contains uranium-bearing shale.

How is it made? According to traditional methods, rice is boiled, then mixed with barley malt until it is slightly fermented, sweetening it naturally. After it is strained, the mixture is simmered until it becomes a thick dough, which is then pulled like taffy until it is adequately aerated. It eventually hardens, and cut into lengths. Nowadays, you can skip a few steps by using store-bought rice syrup.
How is it enjoyed? Yeot is a candy eaten in its stick or liquid form. Its liquid form is used as a substitute for other sweeteners. There are varying kinds of yeot in each region of Korea, using ingredience such as pumpkin, almond, sesame, persimmon, radish, ginger, or even meat.
Nutrition check! High in carbohydrates due to rice, and high in sugars produced during the fermentation process (a process called saccharification.) Radish yeot has been reported to have anti-inflammatory effects.
A look in the past... For the past 1,000 years, yeot has been a crucial part of ํ๊ณผ (hangwa, traditional Korean confections.) It is gifted as a good-luck charm, especially to those who are about to take exams; this is because ๋ถ๋ค (butda) is a homophone for the terms "to pass a test" and "to stick, cling to," a play on words thanks to yeot being a sticky treat.
A look to the present... In recent years, the term "eat yeot" has become popular as a derogatory insult, synonomous with "screw you."

๐โโ๏ธGim Cookie's (๊น๋ง ์ฟ ํค gimmat kuki) main ingredient is gim, a Korean snack of roasted seaweed sheets.
How is gim made? First, nori seaweed, AKA red algae, is harvested from seaweed farms. The seaweed is shaped into sheets, washed, and dried. It is then roasted, often with olive oil and other seasonings.
How is gim enjoyed? It is often eaten with rice, shredded into flakes, or eaten as is. Alternatively, gimbap is a rice handroll wrapped in gim that has been dried but not roasted.
Nutrition check! Gim is a nutritious vegetable containing protein, carbohydrates, vitamins, minerals, amino acids, anti-oxidants, and fiber.
Bite-sized history lesson. Consumption of seaweed has been observed in Asia for thousands of years.
Scientists propose... it is possible seaweed cultivation may reduce eutrophication (when the water is overloaded with nutrients), which results in algal blooms and major declines in marine life.
