🏃‍♂️Gim Cookie's (김맛 쿠키 gimmat kuki) main ingredient is gim, a Korean snack of roasted seaweed sheets.

How is gim made? First, nori seaweed, AKA red algae, is harvested from seaweed farms. The seaweed is shaped into sheets, washed, and dried. It is then roasted, often with olive oil and other seasonings.

How is gim enjoyed? It is often eaten with rice, shredded into flakes, or eaten as is. Alternatively, gimbap is a rice handroll wrapped in gim that has been dried but not roasted.

Nutrition check! Gim is a nutritious vegetable containing protein, carbohydrates, vitamins, minerals, amino acids, anti-oxidants, and fiber.

Bite-sized history lesson. Consumption of seaweed has been observed in Asia for thousands of years.

Scientists propose... it is possible seaweed cultivation may reduce eutrophication (when the water is overloaded with nutrients), which results in algal blooms and major declines in marine life.

Current events. From 2000 to 2019, the global cultivation of seaweed has nearly tripled.

Happy Autism Appreciation Month!

For those who know me a while, I'm actually autistic if you didn't know, given that I'm diagnosed with autism since I was born. For this Autism Appreciation Month, I decided to reference Super Mario Galaxy in celebration of the release of the movie that came out this month.
