chicken enchiladas with green chili sour cream sauce
2 c cooked, shredded chicken
2 c shredded monterey jack cheese
1 (4 oz) can diced green chillies
Preheat oven to 350 degrees. Grease a 9x13 pan.
Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
Stir in sour cream and chilies. Do not bring to boil.
Pour sauce over enchiladas and top with remaining cheese.
Bake 22 min and then under high broil for 3 min to brown the cheese.

the only change i made was that i had more than 2 c of chicken, and my tortillas were so thick i could only fit 9 of them in the pan. i just baked the chicken, but next time i might do it in the slow cooker with some very mild spices - the dish is flavorful enough that it doesnāt need much. i might also try cutting the tortillas in half before rolling and baking to make them easier to serve. or i might just make huge batches of this sauce and pour it on EVERYTHING I EAT.
