Spring Tonic Yard Salad w/ edible weeds and flowers:

-Chickweed & Violet Greens

-Purple Dead-Nettles

-Dandelion Greens

-Cherry, Dandelion & Violet petals

-Chickweed contains saponins, plant compounds that can alleviate inflamed mucous membranes and facilitate the breakup of secretions from the membranes. It acts as a demulcent and expectorant, helping to clear mucous and ease congestion in the lungs. Also high in many nutrients, including vitamin C and antioxidants, Chickweed helps to relieve inflammation in the nose, sinuses and respiratory tract whilst helping to eliminate the underlying cause of infection. This delicate fine herb has a light floral-medicinal taste, mildly salty, combined with a grassy touch. Sweet and aromatic, the flavor of our chickweed plant is somewhere between parsley and anise.

-Violet leaves and flowers are loaded with minerals and vitamins, especially A and C. The leaves are tasty both raw and cooked. The flowers are sweet and tangy, and make a gorgeous garnish on salads and desserts

-Purple dead-nettle is edible, in fact, you can eat the entire plant. It has a mild, slightly grassy, somewhat floral flavor, and the purple tops are even a little sweet. Although it is in the mint family, it doesn't have a minty taste. It can be used in salads, soups, blended into smoothies or made into a tea. The plant is highly nutritious. It’s abundant in vitamins, particularly vitamin C, along with iron and fiber, while the oil in its seeds is packed with powerful antioxidants.

- Dandelion is a source of a variety of nutrients and the leaves and root contain Vitamins (like A,C, K and B-vitamins) as well as minerals (including magnesium, zinc, potassium, iron, calcium and choline). The various parts of the plant have a long history of use as an herbal remedy, and every documented population in areas where it grows naturally has used it medicinally. It also serves as an abundant natural food source, as all parts of the plant can be eaten. The root is often roasted and used in teas or consumed whole. The leaves make a great addition to salads or other dishes requiring greens and the flowers (while still yellow), can be eaten raw, cooked or even made into wine!

-Cherry blossom petals are edible with slight floral and tangy flavor. They are quite popular in Japan and used for a variety of foods and products. They make a beautiful addition to salads and a very unique tea.
