Just like Panera! Broccoli and Cheddar soup!
Ingredients:
1 tablespoon melted butter
1/2 medium chopped onion
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half cream
2 cups chicken stock
1/2 lb fresh broccoli
1 cup carrot, julienned
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar cheese
salt and pepper
Directions:
1. Sauté onion in butter. Set aside.
2. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half.
3. Add the chicken stock. Simmer for 20 minutes.
4. Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes.
5. Add salt and pepper. Can be puréed in a blender but I don’t. Return to heat and add cheese. Stir in nutmeg.
**This sounds amazing, and as soon as i go grocery shopping, i'm making it :)**
Redbull Smoothie!
**I used to go to a local smoothie shop and get a redbull smoothie every morning before school. Ever since I moved away, I've been trying to recreate it. This is the closest I've gotten.** What you'll need:
1 can redbull
1 banana, chopped up and frozen
1 1/2 cups strawberries, chopped up and frozen
1 packet peach flavored yogurt
How to make it:
Put all ingredients into a blender
Blend until smooth
Add ice if needed
Thats it! And it's soooo good. You can experiment with different flavored yogurts, or different frozen fruit, just make sure it always equals 2 cups.
I made porkchops for dinner tonight
They cooked all day in the slow cooker, and smelt SO good.
But they came out terrible. I'm not even going to post the recipe. My husband I were NOT impressed. Hopefully I'll come up with something better for tomorrow for you guys!
Stuffed shells

What you'll need!
2 5 oz bag of hormel pepperoni minis
1 box of jumbo shells (they last me about 2-3 “recipes”)
marinara sauce (i buy preggo, the mushroom one, and the big bottle because i make spaghetti and pasta too)
1 can of mushrooms
1-2 bags shredded mozzarella cheese
How to make it!:
Mix the pepperoni, mushrooms, some cheese, and some sauce while the shells are cooking (i usually make 10-12 shells for one meal) and preheat the over to 350. Then once the shells are cooked, run them under cold water a bit to cool them down for handling. Stuff the mixture into the shells and line them up on a baking tray. put sauce over them and a layer of cheese then put them in the oven for 15 mins until the cheese is bubbly. Enjoy!
Grilled Chicken
What you'll need:
1 cup water
1/4 cup soy sauce
1/4 cup worsteshire sauce
1/3 cup lemon juice
dash of salt and pepper
1 tbs minced garlic
2 tbs mustard
washed chicken pieces
How to make it:
Combine water, soy sauce, worsteshire sauce, lemon juice, salt & pepper, garlic, and mustard in a medium sized bowl. Whisk together and pour into large zipper bag.
Add your chicken, and refrigerate over night, or atleast 4 hours prior to grilling.
Put Chicken on heated grill for 7 minutes.
Flip chicken, baste with marinade, and grill for another 7-9 minutes.
Thats it!
I found this marinade online and Michael and I were very impressed with it. The lemon was kind of strong, so if you're not a big fan of lemon flavor, reduce it a little bit. Our chicken came out perfectly cooked and very juicy! I made frozen corn and peas to go on the side. It was DELICIOUS.
**This recipe says it's "Red Lobster Cheddar Bay Biscuits" but they're not quite right. They're still a little thick in the middle instead of light and airy like red lobsters. Still delicious though!
Cheddar Biscuits
What you'll need:
4 cups bisquik mix
1/2 cup sharp cheddar cheese
1 1/3 cups water
1/2 cup butter
1/8 tsp onion powder
1/8 tsp garlic powder
1/2 tsp parsley
dash of salt and pepper
How to make it!
Preheat oven to 375.
Mix together bisquik, water, and cheese until dough-like.
Space evenly on a cookie sheet and bake for 13-15 minutes.
Melt butter in the microwave.
Add garlic powder, onion powder, salt, pepper, and parsley.
When biscuits come out of the oven, brush immediately with melted butter mixture.
Enjoy!
The original recipe said to cook for 10-12 minutes but when i checked them they looked exactly like they did when i put them in the oven. the first batch took 16 minutes, but i made them way too big. the second batch came out better. Like i said, they're not red lobster's, but they're still pretty damn good :)

We are waiting until our food stamps come through to go grocery shopping, so we've been living on ramen and chicken nuggets for the last few days. I promise, as soon as we get some money in, I'll go grocery shopping and start cooking again. Thank you for your patience!
Mug Brownie!
What you'll need:
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa powder
a dash of salt
2 tablespoons oil
2 tablespoons water
How to make it!
Combine dry ingredients in a mug. mix well.
Stir in water and oil.
Microwave for 1 minute and 15 seconds.
Thats it! The brownie should look a little wet in the middle. Your brownie will be more cake-y than fudge-y.This is amazing for a quick dessert when you don't want to make an entire pan of brownies. You can throw in a handful of chocolate chips, or top with a scoop of ice cream as well. It'll cure any chocolate craving, and it's sooo easy. The best part is, No egg! So you can eat a little bit before you throw it in the microwave. Just as good ;) Enjoy!
Beef and Tomato Sauce Pasta
What you'll need:
1 15oz can tomato sauce
1/3 cup butter
1 tablespoon minced garlic
1/2 lb ground beef
1 can mushrooms
egg noodles
pepper, italian seasoning, onion powder, garlic powder, and worsteshire
How to make it!
Boil water. Add noodles and cook until tender. Drain.
Meanwhile, melt butter in a sauce pan and add tomato sauce. let simmer.
Brown ground beef and add minced garlic.
Pour ground breef, minced garlic, and can of mushrooms into sauce.
Add pepper, italian seasoning, onion powder, garlic powder, and worsteshire to taste. (I used salted butter, so there was no need to add any more salt)
Pour sauce over noodles and Enjoy!
I found this recipe online, and used it as a base. After reading over the comments, i decided to add ground beef, mushrooms, and garlic. The sauce was still a little bland, so i grabbed some of my favorite spices, and just kept adding until it tasted how i wanted. The fun part of this recipe is you can make it a ton of different ways!
Lasagna!
What you'll need:
1 15oz tub ricotta cheese
2 cups mozarella cheese
lasagna noodles
parsley
salt & pepper
1 egg
parmesan cheese
1 jar spaghetti sauce (I used bertolli, garlic basil and olive oil)
1 lb ground beef
1 can mushrooms
How to make it!
Preheat oven to 400.
Brown ground beef in a skillet, drain.
Heat jar of sauce in a pot and add ground beef and mushrooms.
In a large bowl, mix ricotta cheese, 1 1/2 cups mozzarella cheese, a pinch of parmesan, egg, and a dash of salt, pepper, and parsley.
In a large baking dish, start with a thin layer of sauce, then put 3 (uncooked)lasagna noodles on top, a layer of ricotta cheese mixture, then sauce again. Repeat 2-3 times, ending with sauce and top with remaining mozzarella cheese.
Cover with aluminum foil and bake for 30-40 minutes or until bubbling and cheese is melted/ noodles are soft.
Let cool and serve!
When i used an entire pound of ground beef, my sauce came out very chunky. I like all the meat, but if you prefer more sauce, go with a jar and a half. Also, i love mushrooms, so i put them in everything but you can easily omit them. You can add bell peppers or onions to your taste. Also, i made this for 6 adults and had just enough for everyone. If i had made it for just husband and I, we would have had pleanty left over. I hope you like it!

Cinnamon Sugar Toast
What you'll need:
1. bread
2. butter
3. cinnamon
4. sugar
How to make it!
1. Toast as many pieces of bread as you would like.
2. Spread a thin layer of butter over each piece.
3. in a small bowl, combine 2 parts sugar for 1 part cinnamon. Alter to your taste.
4. Sprinkle over buttered toast.

I didn't cook last night, and I think we're ordering pizza tonight! I'll find a recipe for tonight, and add a picture to it later :) Let me know if you have any requests!
**The bacon falls to the bottom since it is heavier than the popcorn so it was hard to get a good picture with the bacon in it. There is a lot more in there!**
Maple Bacon Popcorn
What you'll need:
1 cup pop corn (I use kettle corn)
4 strips bacon
maple syrup
How to make it!
Fry bacon in a skillet. Don't drain the fat! Set bacon aside, and crumble.
Pour bacon fat in a quart sized pot. Add popcorn on high heat. Once popcorn starts popping continuously, turn to low and let popcorn finish popping.
Transfer popcorn to a large bowl and mix in bacon and syrup to taste.
Thats it! It's fairly easy and really yummy! I use the regular sized Orville Redenbachers kettle corn, and just cut it out of the package and pour the popcorn and oil into the pan with bacon fat. Enjoy!

Potato, Egg, Chorizo, and Cheese breakfast burrito
What you'll need:
2 eggs
milk
1 diced potato
chorizo
shredded muenster cheese (or whatever cheese you like)
tortilla
How to cook it!
Season potatos to taste (I use salt, pepper, and penzy's spices "Mural of Flavor" and place in skillet of hot oil.
put as much chorizo as you like in a skillet and seperate with a fork.
whisk two eggs and a splash of milk in a bowl, then add to chorizo until eggs are scrambled and chorizo is cooked (it will be slightly darker in color).
put chorizo, egg, and potato on the tortilla and top with cheese. Roll up tortilla, and enjoy!
I think chorizo has a better flavor than sausage, and it's michael's favorite as well. Always start the potatos first because they take longer to cook. I usually end up with a bunch left over so i just put them on the side. Also, i just use whatever cheese i have on hand. This morning it was muenster, but it doesn't make that much of a difference. It's a fairly quick and very yummy breakfast! :)
Beef or Cheese Enchiladas
**These are not enchiladas that you get a restaurant. These are authentic enchiladas you would find in mexico. Also, this recipe is slightly more difficult, but once you get it down, you can whip them up in no time! It's also my husbands absolute favorite!**
What you'll need:
1 bag of dried new mexico chili pods (Guadajillo peppers)
1 cans of tomato sauce
corn tortillas
oil
shredded muenster cheese
ground beef
How to cook it!
Boil 5-6 chili pods in a large pot until tender. Once cool, pull of stems. Put chilis in a blender with a can of tomato sauce.
Once blended, pour in a strainer over large bowl. The sauce is thick, so you will need to use a large spoon to push the sauce through. Throw away seeds and skins.
Brown ground beef in a skillet and set aside.
Heat oil in a skillet at medium heat.
Dip corn tortilla in the sauce and fry in hot oil until tender, flipping once.
remove tortilla from skillet, add ground beef and cheese, and roll up.
Top with muenster cheese.
Continue 4-7 until you have enough enchiladas for everyone.
Refrigerate the remaining sauce for next time!
Like i said at the begining, this one is a little more difficult. The sauce is the hard part. Once that is over with it's fairly simple. Theres a couple of tricks I've learned from making these quite a few times. 1. more chilis, more heat. Michael even likes to add crushed red peppers to his. 2. the tortillas tear very easily, and are VERY hot. I roll them with a fork. They don't always come out pretty, but they're definitely delicious.
Chicken Parmesan!
What you'll need:
- chicken breast sliced thin (however much you need)
- 1 egg, beaten
- Italian style bread crumbs (I use progresso panko crispy breadcrumbs, italian style)
- olive oil
-spaghetti sauce (I use bertolli, olive oil, basil and garlic)
-mozzarella cheese
How to cook it!
1. Pre-heat oven to 400F. Cut chicken into thin slices or beat thin.
2. Dip the chicken in egg and roll in the breadcrumbs.
3. place chicken in skillet of heated oil and cook until browned on both sides.
4. Pour a thin layer of spaghetti sauce in a large baking dish. Arrange chicken in dish, and top each piece with mozzarella cheese.
5. Cover with aluminum foil and bake until chicken is cooked through, about 45 minutes.
All done! I put mine over spaghetti noodles. Also, if you have a spaghetti sauce recipe that you like, use it! I just use the stuff in a jar because i haven't found a spaghetti sauce recipe that i really like. Let me know what you think!
