Bitter gourd Bitter gourd or Karela, is rich in antioxidants and is one of the healthiest vegetables to be included in your diabetes diet. Bitter gourd contains two active compounds; charantin, an anti-diabetic compound that lowers the blood sugar levels and polypeptide-p, an insulin-like compound. Even though it has a bitter taste, it helps you in controlling your blood sugar levels. 2. Spinach Spinach is full of dietary fiber, folate, and vitamins A, B, C, E and K. The body cannot easily digest the dietary fiber. This will ensure slow metabolization of sugar and thereby preventing sudden blood sugar spikes. 3. Cauliflower Cauliflower is loaded with protein, magnesium, phosphorus, potassium and manganese. The Glycemic Index of cauliflower is very low and therefore ideal for diabetics. Asparagus Asparagus contains an antioxidant know as glutathione, which is known to control the blood sugar levels and enhance the production of insulin in the body.
