Western culinary traditions dictate that soup should be served at the beginning of a meal, but inspired by one of Aidan's most admired chefs, @davidkinch of @manresarestaurant, we serve this course in the middle of the menu. Happy #internationalwomensday! We want to take this opportunity to highlight some amazing women, without whom @eleven98hackney wouldn't have ever been possible. First and foremost is of course @bryonywilson, whose lightbulb moment while we were on a train up to Glasgow sparked the inspiration that started it all. Part-time maître d', full-time partner in crime, agony aunt, sounding board, business consultant and all-round cheerleader. And we also want to highlight @growingcommunities and @stmarysgarden, the two female-run Hackney-based food growing organisations that supply us with a large part of the plant-based produce we use (basically everything we don't grow or forage ourselves). Julie, Sophie, Richenda, Paula, Siobhan, Cath, Gerry... The list of strong and hardworking women whose work is so fundamental to our existance could go on and on. Carrots from our garden gently poached in a carrot syrup, almond cream + carrot top granita.... 🥕 a new pre-dessert that made its @eleven98hackney debut last Friday. The vibrant carrots and syrup are nice and sweet and the granita has a naturally pleasant bitterness, so we kept the almond cream quite neutral.
