Fruits & vegetables used Plum Origin Manufactured in Fukui Prefecture Characteristics of used fruit and vegetables Uses benisashu plums cultivated in Fukui Prefecture. These belong to an excellent plum variety called Nanko, which is native to Wakayama Prefecture. Benisashu plums are difficult to cultivate, and even with the same amount of time and effort, only 1/3 of the amount of Nanko can be harvested. Compared to other types of plums, the flesh is thicker because the seeds are smaller than other plums, and the appearance is characterized by the slightly red coloring on the side of the fruit that was facing the sun. However, to give the plums a sense of transparency, the green plums are used before they turn red. The umami flavors in the fruit come from the high levels of sucrose and free amino acids, and they contain a lot of mineral components such as calcium, magnesium, and potassium. Therefore, when plum liquor is made, these components are extracted, leaving behind a profound taste.
