bacon & grits

I wanted some comfort food to complement the lazy Sunday/chilly weather I was having with the roomies while we were watching the game/checking our FF (lol) so what better way to satisfy my cravings than GRITS! Quick, easy and delicious..oh, and also probably one of the fattiest. Shrimp n’ Grits is one of my favorite dishes but since I didn’t have any shrimp on hand (I was lazy to walk two blocks to the grocery store), bacon was the next best thing (naturally). Check the recipe below.
Ingredients:
Bacon! The more the merrier
Garlic [breath] sauce: 1 clove of garlic - minced, half an onion - diced, butter, cayenne pepper, paprika (to your liking), olive oil, more butter, splash of lime or lemon juice or half of lemon/lime, salt to taste
Cheesy Grits: cube of bouillon, even more butter, salt, pepper, half cup of parm
Directions:
Melt the butter and olive oil (yes, both) in a sauce pan and sauté the garlic and onions until they turn a light brown and then add all the seasonings and set to low heat. Add the lime/lemon juice and you’re good to go.
Add bouillon and how many servings of grits + water ratio you want in a pot on medium heat (but stir constantly so it doesn’t stick). I used instant grits (don’t judge me), which ended up not really being instant at all because I probably made 8 servings (all for myself - I don’t know portion control, ok..). Anyway, when the consistency is thicker, switch to high heat and add butter, salt, pepper and parmesan cheese to the mix.
Garnish with scallions and that beautiful, crumbled bacon and Ta-da! Clogged arteries in a bowl. Enjoy!
