This is how I see the coffee thing. It was 100% a manipulation tactic.

Everything the Metatron said and did was designed to get Aziraphale to respond exactly how he wanted. Even the way he framed his offer to be all about Crowley, knowing Aziraphale cared for him than anything else on Heaven and Earth. And I'd bet money he knew full well that Crowley would reject him too. The glare he gave Crowley before leaving was. Frightening.

Do baby Whovians know who Mary Whitehouse is? I feel like we should have some introductory handbook.

Mary Whitehouse was a person who complained for a living. Mostly about us. Continually tried to get us cancelled, and censored, and was widely hated - as all moralisers ultimately are. She’s actually a really important element of the show’s history, and you’ll find older fans will refer to her name as a catch-all term for (especially Christian-ethics based) morality police.

also, it’s good to note that Doctor Who and the people making it hated her as well (obviously), but in the Behind The Sofa’s for the Blu-ray release of season 18, Tom Baker and a bunch of other people of people involved in that season would point out things and be like “oh, Mary Whitehouse wouldn’t have liked that” “if Mary Whitehouse was in charge, that wouldn’t have gotten in” and I don’t know why, but that shit just cracks me up
