12 things to remember....
Hey Ya’ll! Apologies in advance for my 1 or 2 month hiatus from my page!! Moving to a new state with only one of two family members, finding jobs/careers, and the every day hussle and bussle of life has proved to be very challenging. The good news is... IM BACKKKK!! And, as always, my positivity follows me wherever I go!! I also have a new adventure that I’ll be embarking on, so stay tuned!! :)

I knew it... and I called it that our first legitimate visitor in florida would be none other then my very best friend. I could go on for HOURS about our trials and tribulations, our ups and downs, our laughs and our cries, but that is a bond that only her and I share. Id rather have a few real friends then a whole ton of snakes in the grass (STAY ON THE PAVEMENT!!) friends. Thank you wifey for being nothing other then you! I love youuuuuu!!!
Garlic infused Pork Roast, Red potatoes, Carrots & Onions
Ingredients-
Pork roast (size and cut of your choice)
Fresh minced garlic
Garlic Salt
Cajun Seasoning
Parsley
Salt & Pepper
Red potatoes
Olive oil
Half of yellow onion
About 40-50 baby carrots
Directions-
Now, I made this a little different then I normally would cause it was a long, exhausting day so I prepped and got it all together with the intentions of taking a nap while it cooked (lol!)
Wash and Rinse the pork, potatoes, & onion. Mince garlic. Lay the pork roast directly in the middle of a non stick pan so you can surround it with all the veggies! I stabbed the pork roast and with each stab, I also turned the knife to create a bigger hole to fit the chunks of garlic inside the actual roast. Season to taste. Then just add the potatoes, carrots and oils and drizzle with olive oil.
 I preheated the oven to about 200 degrees knowing that my nap would be a satisfactory one (I don't believe in 20 minute power naps!) I woke up about an hour later and everything was just beyond the point of being warm. I then turned the oven to 325degrees and cooked for an additional 45 minutes, stirring the vegetables around so they wouldn't stick to the pan. So tender!!

Roasted Brussel Sprouts
... So easy, so quick, and so good for you!!
Ingredients-
Brussels (washed and cut, or whichever u prefer.. some people like them whole)
Olive oil
Lemon juice
Salt & Pepper (to taste)
Parmesan Cheese
Directions-
Preheat oven to 400degrees.
Like previously stated, wash and cut your brussels in halves, or keep them whole, whichever you prefer! Lay them in non stick roasting pan, or baking sheet. Drizzle with olive oil, lemon juice and salt and pepper. Cook between about 10 minutes and remove from oven. Sprinkle parmesan cheese on top and bake an additional 5-10 minutes depending on how crunchy you like your veggies! Easy as ever!!!!
