Delicious, simple and healthy balanced salad. Perfect for when you’re in a rush or on the go as it took me less than 5 minutes to make. Simply mix lettuce of choice with some beans, I used a 4 bean mix, cherry tomatoes, carrot, half an avocado, dress it with olive oil, red wine vinegar and salt and add some ryvita crackers. The key to a salad keeping you full is to make it balanced. This salad contains a good amount of protein from the beans, as well as as healthy fats from the avocado and olive oil and carbohydrates from the crackers. If your salad just contains lettuce and tomato there’s no way that’s going to fill you up and honestly that’s just so boring.
