The reason why:

He knows the real reason she turned him in again is that she wanna end whatever was going on between them. She thought that if she lets him down once again... he won't come back, not this time. But she should've known one thing. He doesn't give up that easy... Besides, he’s used to being handed over, so it doesn’t matter to him anymore. He just does what he does.
I think those scenes are connected somehow. (It might sound like a cliché, but I’m gonna say it anyway…) If the Rose Chardonnay implies romance, then Rio getting it right about what she’d actually drink shows he knows she wants more than just a romance—unlike the other girls who *help* him out or something. And that’s why he finds her more interesting than anyone else and also thinks she’s kinda like him...
On seeing the red rubber band, he would know who made the money. He just knows it was her. THIS IS HOW TO SAY I LOVE YOU WITHOUT SAYING I LOVE YOU.
It's funny how the way Rio intimidates her into doing something is a lot like how he's been used by Nick.

I think Rio already sensed that there might be a wire so that others could hear. He wanted to make sure that the only thing they could hear was hers, not his. I think this is why he held her back. He had her MAKE a sound INTENTIONALLY.
At first, I was not sure that Beth noticed what he had done.

There is an interesting fact about the relationship between Beth, Rio, and Dean.
Rio never wanted to get rid of Dean. Rather, he’s been using him as leverage. This means he knows that Beth still cares about him as much as she loves her children, and also he doesn’t give a damn...
For him, the reason they are together doesn’t have to be love. As long as he's sure that Beth needs no one but him for some reason (not necessarily something sexual), he can’t be bothered with whoever she’s with.
