4.16.17 // Haven't posted in a while bc I've been crazy busy with schoolwork but summer's just around the corner and that means I'll be cooking more! Did some Easter baking today—gluten free, dairy free chocolate chip cookies made using texanerin's recipe
2.28.16 // love going to bed feeling like I'm being stabbed with every move
2.19.17 // I feel terrible. Ate some brown rice fusilli pasta with tomato basil pasta sauce and less than five minutes later I'm having stabbing pains in my stomach. Wondering if it's the onion/garlic bc I've been researching the low fodmap diet and have been avoiding those two for a while now and everything else I ate was totally corn/gluten/dairy free. Gonna schedule an appointment with a GI soon and I'm hoping I can maybe get a colonoscopy or something because the last few weeks have been hell for some unknown reason and I feel almost as bad as I did a year ago when I got diagnosed. I'm constantly bloated to the point of literally looking like I'm pregnant and there are days where I'm super hydrated but still stand up and am so dizzy I have to hold onto something. I'm overall so much unhappier than I used to be because eating is such a chore and I can't enjoy the foods I used to be able to. I eat so much more healthily than anyone I know and it's so frustrating to continue to have such bad symptoms when I'm doing everything I'm supposed to. Might try and do low-fodmap for the next few weeks then start reintroducing foods to see what bothers me but it's just such a restrictive diet on top of my current restrictions that I don't see myself having the willpower to go without stuff that I eat all the time now like almond flour, cashews, apples, etc. Any suggestions appreciated.

2.5.17 // Been crazy busy for the last few weeks but here’s a salad I made the other day--spring mix with grapes, slivered almonds, a boiled egg, and an olive oil and balsamic vinegar dressing.
1.19.17 // not gonna lie, I've sorta hit a wall lately. My stomach has been messed up for weeks now and I'm just as bloated as I was about a year ago pre-celiac diagnosis. I have no idea what's causing it as I've been very careful about what I eat--there's no pain like when I eat gluten/corn/dairy, just dizziness, fatigue, and feeling bloated and full all the time. I'm tired of not being able to eat what I want, and I'm tired of trying to further restrict myself to stop these weird symptoms I've been having lately, especially because I eat more healthily than anyone I know. I caved today and had chocolate for the first time in a week after I told myself I'd hold off eating it for a while due to acne breakouts which actually might be caused by me stopping my meds a month ago because they had corn starch in them. I've looked at the FODMAP diet and am considering trying it to see if it helps any, but I really don't want to restrict my diet any further than what it is now. Planning on seeing an allergist/GI soon to talk about some of this. Very frustrated

12.17.16 // Sweet potato with cinnamon and sugar, and a salad with balsamic vinegar and olive oil. Trying to be super healthy and cutting out all junk food for now because I ate some mashed potatoes (with dairy in them I'm sure) last week and I’ve been messed up ever since.

11.15.16 // Can someone please explain why there is dextrose in every thing of salt in my house. Never even thought to check iodized salt for corn and I have no idea how many dishes I've used it in. So frustrating!!!!!
