I understand that many people correct me about the characters' pronouns, but I'd like to explain my point of view.
I know that, in the canon, the characters have an unspecified gender, and that using they/them in English is the correct way to refer to them. Whenever I write in English, I try to use those pronouns to stay true to the canon.
However, Spanish works differently. Our language doesn't have a widely accepted neutral pronoun. Some people use elle, but it's not commonly used by everyone and often becomes a topic of debate. Because of that, when I write in Spanish, I sometimes use he or she simply because it feels more natural in my language, not because I'm saying the character is male or female.
I'm also a non-binary person, and personally, I don't mind being referred to as he or she. Every non-binary person experiences their identity differently, and that's simply my personal experience.
I'm not trying to erase the characters' identity or be disrespectful. I'm just adapting the way I write to the language I'm using. If I'm writing in English, I use neutral pronouns. If I'm writing in Spanish, I sometimes use he or she because that's what feels most natural for me.
