Arroz ala Cubana for Supper
Turmeric - Curry Rice ala Goodness Gracious 💚

Ingredients:
Starter (fed and autolysed at least an hour)
Wheat Flour (sifted)
Molasses/Granulated Sugar
Cream/Milk
Egg
Lemon and/or orange zest
Cinnamon
Salt
Butter
Vegetable oil
In a bowl, mix all dry ingredients (wheat flour, butter, salt, cinnamon). In another bowl, stir milk/cream, starter, molasses, egg and lemon zest.
Combine wet and dry ingredients and form into a dough.
Let dough rest awhile, then knead until smooth and supple.
Allow dough to ferment and rise for a couple of hours. *I do this the night before I cook the doughnuts. I keep the dough in the fridge.
The next day, let dough rest in room temperature. Then roll and shape. Cover for at least 10 minutes.
While waiting, work on the glaze and toppings.
*Powder sugar and cinnamon
*Maple butter glaze
Fry on vegetable oil, at least 45 seconds on each side. *You’ll know its done when doughnuts float to the surface and gets a nice, crisp, golden color. Let cool on a rack, and dip unto glaze and toppings.
Best enjoyed with the buddies and a good cup of coffee!
Really simple and tasty Tzatziki recipe ~
Ingredients :
Cream
Mayonnaise (*if available, yogurt)
Garlic ( 2 cloves , pounded)
Lime juice ( I use lemonsito )
Cucumber (peeled and shredded *make sure to take out seeds)
Dill (or any mint herb wiil do)
In a bowl, mix cream, mayonnaise, garlic and lime juice. Then, add cucumber shreds and season well with fresh Dill.
Best with Pita or any other baked breads, chips . . anything really. Perfect for a quick, tasty snack! To store, simply keep in glass jar (with lid) in a cool place.
*Should have rich, creamy consistency. Make sure to drain liquid from cucumber before adding to the rest of the ingredients.

Ingredients:
Garlic clove
Fresh picked Sweet Basil leaves
Moringa leaves (optional, if available)
Herb & Seasonings (Salt, Pepper, Cinammon, Sesame oil)
Cream and/or Milk
With a mortar and pestle, simply pound and grind ingredients starting with garlic clove, then Sweet Basil and Moringa leaves, season to taste and lastly, mix them all together with the cream and/or milk. The idea is to extract the essential oils from the plants.
Go slow and enjoy the process.
