Ooey Gooey Cake Mix Bars

Ingredients

CRUST:

1 box yellow cake mix, dry- not prepared

8 Tablespoons butter, melted

1 egg

GOOEY LAYER:

8 oz. cream cheese, softened

2 eggs, beaten

16 oz. powdered sugar

Method

Preheat oven to 350 degrees F.

In a medium bowl, combine cake mix, melted butter and egg. Mix until smooth and well combined.

Pat and press dough evenly over the bottom of a greased 9x13 baking pan. Set aside.

In a separate large bowl, beat and cream the cream cheese. Add the eggs and beat until smooth for a minute or two. Add powdered sugar and continue to beat until well combined.

Pour over crust and bake at 350 degrees F for about 25-30 minutes or until done. Do not over bake.

When done, remove from oven and let cool completely before cutting into.

LEMON-ZUCCHINI BREAD

Ingredients

2 cups unbleached all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 eggs

1/2 cup canola oil

2/3 cup sugar

1/2 cup buttermilk

Juice of 1 lemon (or 2 Tablespoons lemon juice)

Zest of 1 lemon

1 cup grated zucchini (you don’t need to peel the zucchini before grating it)

Method

1). Preheat oven to 350 degrees. Grease and flour a 9×5? loaf pan; set aside.

2). In large bowl, blend flour, baking powder, and salt; set aside.

3). In medium bowl, beat 2 eggs well, then add canola oil and sugar, and blend well. Then add the buttermilk, lemon juice, and lemon zest and blend everything well. Fold in zucchini and stir until evenly distributed in mixture.

4). Add this mixture to the dry ingredients in the large bowl and blend everything together, but don’t overmix.

5). Pour batter into prepared 9×5? loaf pan and bake at 350 degrees for 45 minutes, or until toothpick inserted in center comes out clean (if your oven tends to run hot, check the loaf after 40 minutes; also. Cool in pan 10 minutes, then remove to a wire rack and cool completely. While loaf is cooling, you can make the glaze.

LEMON GLAZE:

1 cup powdered sugar

Juice of 1 lemon (or 2 Tablespoons lemon juice)

In small bowl, mix powdered sugar and lemon juice until well blended. Spoon glaze over cooled loaf. Let glaze set, then serve.

Caramel Cream Carrot Cake

ingredients

For the Cake:

2 c. flour

2 c. sugar

4 eggs, room temp

2 c. grated carrots

1 1/2 c. oil

1 tsp vanilla

1 1/2 tsp baking soda

1 tsp salt

2 tsp baking powder

2 tsp cinnamon

1 jar Caramel Ice Cream Topping

1 can Cream Cheese Frosting or 1 recipe homemade Frosting (recipe below)

Method

Preheat Oven to 350.

Beat sugar, eggs and oil together. Add remaining ingredients, stirring in the grated carrots last. Pour into a greased 9 X 13 inch pan. Bake at 350 for 30-40 minutes.

Poke holes evenly throughout the warm cake using the end of a wooden spoon. Pour half of the caramel sauce all over the cake, spreading sauce out evenly making sure it seeps into holes. Refrigerate for about 2 hours.

Reserving 1-2 tablespoons, pour the remaining caramel sauce into the cream cheese frosting and stir until evenly combined. Spread caramel-cream cheese frosting evenly over the cake (after it has refrigerated).

Drizzle the reserved 1-2 tablespoons of caramel sauce all over the top of the cake.

Cream Cheese Frosting

Ingredients

8 oz. cream cheese, soft

1/2 c. butter

1 lb powdered sugar

1 1/2 tsp vanilla

Method

Combine butter, cream cheese and vanilla. Beat well. Add sugar gradually, while beating. Add a small amount of milk if it gets too thick.

Cheeseburger Pie

Ingredients

1 pie crust, standard

1 Tbsp olive oil

1 onion, chopped

1 red pepper, chopped

2 cloves garlic, minced

1 lb ground beef

1 cup tomato sauce

1 tsp oregano

1 tsp salt

½ tsp black pepper

½ cup dry bread crumbs

1 egg

¼ cup milk

½ tsp salt

½ tsp dijon mustard

2 cups cheddar cheese, grated

Method

Preheat the oven to 425 F (220 C).

Line a 9" pie pan with the crust and prick all over with a fork. Cover with aluminum foil and pastry weights and bake for about 15 minutes. Remove the foil and weights, then bake for about 5 to 10 more minutes, until browned.

While the crust is baking you can prepare the filling.

Heat the oil in a heavy bottomed skillet, then cook the onion and pepper until they begin to soften--about 4 minutes. Add the garlic and cook for another minute or two, then add the ground beef and cook until browned, breaking it up often.

Stir in the tomato sauce, the oregano, salt, pepper, and bread crumbs, and remove from heat.

In a small bowl, beat together the egg and milk then whisk in the salt, mustard, and cheese, and set aside.

Spoon the beef evenly into the pie crust, then spread the cheese mixture over the top, all the way to the edges.

Bake for about 20 - 25 minutes, or until the cheese topping is golden brown. (Keep an eye on the edges of the crust--if they begin to get too browned, make a foil ring and cover them up for the last 10 minutes of baking.)

NO-BAKE ENERGY BITES

Ingredients

1 cup (dry) oatmeal (I used old-fashioned oats)

2/3 cup toasted coconut flakes

1/2 cup peanut butter

1/2 cup ground flaxseed or wheat germ

1/2 cup chocolate chips (optional)

1/3 cup honey

1 tsp. vanilla

Method

Stir all ingredients together in a mediumbowl until thoroughly mixed. Let chill inthe refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1? in diameter.) Store in an airtight containerand keep refrigerated for up to 1 week.

Tip:

Substitution ideas can abound for just about any of these ingredients! Feel free to substitute in your favorite nut butter (almond butter, sunflower seed butter, etc.) for the peanut butter. And you could also add in some wheat germ in place of some or all of the flaxseed. I would caution, though, against substituting agave nectar for the honey, as the honey’s thickness helps hold things together.

Some other fun substitutions for the chocolate chips (or an addition to them) could include:

chopped dried fruit (apricots, dates, raisins, etc.)

dried berries (cranberries, cherries, etc.)

chopped almonds, pecans, walnuts, or sunflower seeds

other chips (butterscotch, dark chocolate, milk chocolate, white chocolate, M&Ms, etc.)

other grains (different kinds of oatmeal,rice cereal, etc.)

Cauliflower Pizza Crust

Ingredients

1 head cauliflower, stems removed and cut into 2-inch florets

3 eggs

2 cups mozzarella cheese

1 1/2 tsp dried herbs (oregano, thyme, rosemary, Italian seasoning, etc.)

A couple big pinches of salt

Your favorite sauce, toppings, and cheese

Method

Preheat oven to 450 degrees F. Prepare a rimmed baking pan with nonstick spray or silicone liner.

Boil or steam the cauliflower until it is easily stabbed with a fork. Drain well, transfer to a food processor and process until smooth. Transfer cauliflower puree to a large bowl and add the eggs, 2 cups of mozzarella cheese, dried herbs and salt. Mix well.

Spread mixture in an even layer on the prepared baking sheet. Bake for about 18-20 minutes or until the crust begins to turn a darker golden brown around the edges with spots on top.

Remove from the oven. Add desired sauce, toppings, and cheese. Return to oven for 10-12 minutes or until toppings are heated through and cheese is melted and golden.

Honey Roasted Chicken

Ingredients

1 tablespoon salt

2 teaspoons pepper

1 teaspoon paprika

2 whole chickens (3 1/2 to 4 pounds each), giblets discarded

1 teaspoon cornstarch

1 cup plus 1 tablespoon water

1/2 cup honey

5 tablespoons cider vinegar

1 cup low-sodium chicken broth

2 teaspoons dried thyme leaves

2 tablespoons butter, cut into pieces and chilled

Method

Preheat the oven to 375 degrees and move the rack to the center position.

In a small bowl combine the salt, pepper and paprika.

Pat the chickens dry with paper towels and rub the spice mixture under the skin and over the outside of each chicken. Tuck the wings behind the back and tie the legs together with kitchen twine to ensure even cooking without burning of those little wings!

Stir the cornstarch and 1 tablespoon of water together in a small bowl until no lumps remain; set aside.

In a small saucepan bring the honey and 4 tablespoons of vinegar to a simmer over medium-high heat. Cook until the mixture is reduced to about 1/2 cup, about 8-10 minutes, stirring occasionally. Slowly whisk the cornstarch mixture into the glaze. Return to a simmer and cook for one minute. Set aside.

Arrange the chickens, breast side down, on a V-rack set inside a roasting pan. Roast until the chickens are golden, about 35 minutes.

Remove the roasting pan from the oven and carefully with a wad of paper towels, flip the chickens so that they are breast side up.

Raise the oven temperature to 450 degrees. Pour 1 cup water and the broth into the roasting pan. Return the roasting pan to the oven and roast until the thigh meat registers 165 to 170 degrees, about 35-45 minutes.

Brush the chickens evenly with a thick layer of the glaze (you’ll have some remaining to brush on later) and continue to roast until the glaze is golden brown, about 10 minutes.

Transfer the chicken to a cutting board and brush with the remaining glaze and let it rest for 15 minutes to ensure that the juices redistribute and settle. If you cut too soon all of the juices will run out and you will be left with a dry bird.

While the chicken is resting, pour pan juices and any accumulated chicken juices into a saucepan and skim any fat. Stir in the thyme. Bring to a simmer and cook until the sauce is slightly thickened and reduced to 1 cup, about 15 minutes.

Off the heat whisk in the butter and remaining vinegar. Season with salt and pepper. Carve the chickens and serve, passing the sauce at the table.

Copycat Red Lobster Cheddar Bay Biscuits

Ingredients

2 cups all-purpose flour

1 Tbsp baking powder

1 Tbsp granulated sugar

1 Tbsp garlic powder

¾ teaspoon kosher salt, divided

1 ½ sticks (¾ cup) unsalted butter (divided)

1 cup whole milk

1 (8 oz) package shredded mild cheddar cheese

½ teaspoon dried parsley

Method

Preheat oven to 450°F. Line a baking sheet with parchment paper. Add 1 stick (½ cup) of butter to a small microwave safe mixing bowl. Microwave for 30 seconds or until butter is melted. Set aside.

In a large mixing bowl combine flour, baking powder, sugar, garlic and ½ tsp salt. Whisk until well combined. Add melted butter and milk and whisk just until flour is all wet, do not over mix. Add cheese and fold in with a spoon.

Drop heaping spoonfuls onto baking sheet. Bake for 10-12 minutes, until biscuits are golden brown.

Meanwhile melt remaining ½ stick (¼ cup) of butter in small mixing bowl. Microwave for 30 seconds or until butter is melted. Add ¼ teaspoon salt and parsley. Stir with pastry brush.

Remove biscuits from oven, brush with melted butter mixture. Serve and enjoy!

Cranberry Christmas Cake

3 eggs

2 cups sugar

3/4 cup butter, softened

1 teaspoon vanilla

2 cups flour

12 oz fresh cranberries

Method

Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip this step. This mixture should form a ribbon when you lift the beaters out of the bowl. Add the butter and vanilla; mix two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix throughout.

Spread in a buttered 9x13 pan. Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (I baked mine for 43 minutes.) Let cool completely before cutting into small slices. I cut mine into fairly small pieces, about 1"x2", so that they could be easily eaten at a party. Enjoy!

Chocolate Eclair Cake

1 (16 ounce) package graham crackers

2 (3.5 ounce) packages instant vanilla pudding mix

4 cups milk

1 (16 ounce) package frozen whipped topping, thawed

1 (16 ounce) package prepared chocolate frosting

Method

1. Line the bottom of a 9x13 inch baking pan with graham crackers. In a large bowl, combine the milk and vanilla pudding according to directions on box. Fold in the whipped topping. Spread a layer of the pudding mixture over the graham crackers. Alternate the graham cracker and pudding layers up to the top of the pan.

2. Cook the container of prepared frosting, uncovered in the microwave for 1 minute on half power. Pour over the top of the cake. Refrigerate for at least 12 hours before serving.

FRENCH MEATPIE

5-6 rustic potatoes-cooked and mashed-plain

2 lbs ground beef

1 lb ground pork

1 large onion diced

1 teaspoon beef granules

1 tablespn Poultry seasoning

1 tspn ground cloves

1 tablespn butter

some milk

Method

Pre heat oven to 375

Prepare and line the pie crusts on two pie plates

In large fry pan melt butter and add onion to cook until translucent. Add ground pork first and cook a couple of minutes then add hamburg and cook until meat is no longer pink. If there is a lot of fat drain some out but leave a little for flavor. Add beef granules and stir. Add some of the mashed potatoes, just enough to bind the meat together, you might not use all of it. Then ground cloves, S & P , then poultry seasoning. This is to taste and you have to have enough to taste it in the pie-this seasoning is the secret. You might have to add extra.

Once you have it to where you like it - fill the pies and top with crust. Make slits for cooking and brush with a little milk to help crusts brown.

Bake for 1 hour until crust is nice and brown. Cut and serve while hot. Our favorite topping is ketchup!

The extra pie once it cools wrap in aluminum foil to freeze. I like to cut it into separate slices and freeze each slice to take out and use only as much as I need.

Rainbow Sprinkle Cheesecake Cookies

1/2 cup butter, soft

4 oz cream cheese, soft

1 cup sugar

1 egg

1/2 tsp vanilla extract

1 2/3 cup flour

1/4 tsp baking powder

1/2 tsp baking soda

pinch of salt

1/3 cup rainbow sprinkles (plus more for rolling in)

Method

Preheat oven to 350.

In the bowl of a stand mixer, beat butter and cream cheese together until smooth. Mix in sugar, egg, and vanilla and beat until creamy.

In a small bowl combine flour, baking powder, baking soda, and salt together. Slowly mix dry ingredients into the wet ingredients and mix until combined well.

Stir in 1/3 cup of rainbow sprinkles (stir in with a spoon). Chill dough in the fridge for 30-45 mins.

Pour additional sprinkles into a shallow bowl.

Make one in balls out of the dough, and roll each into the bowl of sprinkles, coating the entire thing. Place on a baking sheet and bake for 10-12 minutes. You don't want the edges to brown. The top may not be completely set but you can let them continue to cook on the pan once removed from the oven. Let cool and then enjoy!

Lemon Blondies with Lemon Glaze

Ingredients

For the blondies:

1 1/2 cups flour

1 teaspoon salt

1 cup (2 sticks) unsalted butter

1 1/2 cups granulated sugar

1 tablespoon lemon zest

4 eggs

2 tablespoons fresh lemon juice

For the glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

2 teaspoons lemon zest

Method

1 Preheat oven to 350 degrees. Spray an 8 or 9-inch square pan with nonstick cooking spray. In a medium bowl, stir together flour and salt. Using an electric mixer, cream the butter, sugar and lemon zest at medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Stir in 2 tablespoons lemon juice. Reduce speed to low and add flour mixture, mixing until incorporated. Spread batter into prepared pan and bake for about 30-35 minutes, or until toothpick inserted in center comes out clean. Cool on wire rack to room temperature.

2 Meanwhile, make the glaze by combining the powdered sugar, lemon juice and zest in a small bowl. Spread over brownies and let set for at least 10 minutes before serving.

Cherry Cupcakes

Ingredients

Cupcakes:

1 package of white cake mix

1 egg white

½ cup maraschino cherry juice

¼ cup maraschino cherries, chopped

Glaze:

1 package (6oz) white chocolate

3 tbsp. whipping cream

3 tbsp. butter, softened

½ cup icing sugar

½ tsp vanilla

Method

Prepare cake mix according to the package directions (includes using the egg white) and substituting maraschino cherry juice for water.

Fold in chopped maraschino cherries.

Pour into muffin tins and bake for the recommended time (and temperature) as on the cake mix box.

Allow to cool completely before coating with the white chocolate glaze.

To prepare glaze:

Combine white chocolate and cream in a deep bowl. Microwave on high for 1 minute. Stir.

Add butter and microwave on high for 30 seconds. Stir.

Microwave on high for an additional 10 to 15 seconds if needed to let butter and white chocolate melt.

Add in sugar and vanilla and stir still smooth.

Spread glaze over cupcakes and cool to allow the glaze to harden. Top with one maraschino cherry.

Serve and enjoy!

Ginger Cheesecake Bars

ingredients

FOR THE CRUST:

24 whole Gingersnap Cookies

¼ cups Granulated Sugar

1 teaspoon Ground Cinnamon

½ teaspoons Fine Sea Salt

½ cups Unsalted Butter, melted

FOR THE FILLING:

½ cups Unsalted Butter

¼ cups Dark Brown Sugar

¼ cups Granulated Sugar

½ teaspoons Ground Ginger

½ teaspoons Ground Cinnamon

¼ teaspoons Fine Sea Salt

2 teaspoons Vanilla Extract

FOR THE GINGER CHEESECAKE LAYER:

1 whole Large Egg, Room Temperature

1 whole Egg Yolk, Room Temperature

½ cups Granulated Sugar

16 ounces, weight Cream Cheese, Softened To Room Temperature

1 teaspoon Vanilla Extract

2 Tablespoons Crystalized Ginger, Finely Chopped

Method

Preheat your oven to 375 F and line an 8×8 inch baking dish with parchment paper, foil or spray with a non-stick spray. Set aside.

In the pitcher of your food processor or blender, add the gingersnap cookies, sugar, cinnamon and sea salt. Pulse until the mixture becomes a coarse powder. You may need to do this in batches depending on how large your food processor is. Add the mixture to a bowl with the melted butter and mix to combine.

Pour the crust into your prepared dish and press firmly down into an even layer across the bottom using your fingertips. Place in the oven and bake for 10 minutes. Remove from oven and set aside.

For the filling, combine the butter, brown sugar, granulated sugar, ginger, cinnamon and sea salt in a small saucepan over medium-low heat. Heat until butter has melted, whisking constantly. Remove from heat and stir in the vanilla extract. Set aside to cool for just a couple of minutes.

Pour the filling on top of the par-baked crust. Using a rubber spatula, spread the filling so that it is even and covers the entire crust. Set aside.

For the cheesecake: In the bowl of your stand mixer, with paddle attachment affixed, combine the egg, egg yolk, sugar, cream cheese, and vanilla extract. Mix until smooth and creamy, approximately 1 minute. Fold in the crystallized ginger.

Scoop the cheesecake layer on top of the filling. Be very careful as you spread the cheesecake layer over top the filling so that you don’t mix the two. Spread into an even layer, so that it completely covers the filling. It should be thick.

Place the dish in the oven to bake for 15 minutes or until the cheesecake is set on top. Remove from oven and set aside to cool for an hour, then place in the fridge to chill for an additional hour. Cut into bars and serve!

You may store the cheesecake bars in an airtight container, in the fridge, for about a week. Enjoy!

Slow Cooker Cabbage Rolls

Ingredients

•1 large head cabbage

•1 can (8 ounces) tomato sauce

•3/4 cup quick-cooking rice

•1/2 cup chopped green pepper

•1/2 cup crushed saltines (about 15 crackers)

•1 egg, lightly beaten

•1 ounce onion soup mix

•1-1/2 pounds lean ground beef (90% lean)

•1 can (46 ounces) V8 juice

•Salt to taste

•Grated Parmesan cheese, optional

Method

•Cook cabbage in boiling water just until leaves fall off head. Set aside 12 large leaves for rolls; drain well. (Refrigerate remaining cabbage for another use.) Cut out the thick vein from the bottom of each reserved leaf, making a V-shaped cut; set aside.

•In a large bowl, combine the tomato sauce, rice, green pepper, cracker crumbs, egg and soup mix. Crumble beef over mixture and mix well.

•Place about 1/3 cup meat mixture on each cabbage leaf; overlap cut ends of leaf. Fold in sides, beginning from the cut end. Roll up completely to enclose filling. Secure with toothpicks if desired.

•Place cabbage rolls in a 3-qt. slow cooker. Pour V8 juice over rolls. Cover and cook on low for 6-7 hours or until filling reaches 160°. Just before serving, sprinkle with salt and cheese if desired
