I was able to visit Tamerlaine Farm last weekend! It was awesome! (￣▽￣)
This place is a vegan animal sanctuary in NJ where animals who have been abused by the meat and dairy industries are free to live their full lives without being treated as commodities.

I had fennel and fava beans left over from my CSA veggie share, so.. I roasted the fennel, sauteed some mushrooms, made risotto (with some leftover white wine), and just added the beans! (Plus some cannelloni beans!) It was hearty and really tasty!
This was my first time cooking with fennel and it surprised me how mild it tasted when roasted? I would definitely cook with it again!
Vegan Nicoise Salad (recipe here)
I found vegan gyoza skins at Family Mart, so I made gyoza! ^o^ The filling is tofu, cabbage, scallion, and enoki! I was a little worried about the cooking technique, but thankfully, it went okay?? They were delicious!
We salvaged an old butternut squash that was being given away and made Roasted Butternut Squash Soup with it! (recipe here)
I took a trip to Woodstock Farm Sanctuary this weekend!
(And had a chance to eat at the Commissary, which was amazing.)
A lot of the animals at Woodstock are from factory farm conditions, but a fair share of them are from “humane”, “grass-fed”, “backyard butcher”, “cage-free”, etc facilities.. The industry truly profits off of these terms by placating our consciences, but the animals are still abused. One of the staff told me that a pig was rescued from a “farm to table” operation where the owner was slaughtering the animals with a chainsaw and leaving animal limbs strew across the property, so the pigs were surrounded by the limbs of their children.
This is just one of MANY harrowing stories you can hear when you visit these places- it’s nice to see the animals living out their lives in peace, but we have to remember where they came from and what they have endured. And do not let the industry persuade you otherwise from what is really happening.
My lunch 90% of the time.. vegan veggie bibimbap!
Carrots, spinach, zucchini, seaweed, cucumber, gochujang, and rice. I normally have my homemade kimchi, but I ran out!;;
My lunch- I made tofu frittata! \^o^/ It had some red pepper, potato, broccoli, and spinach.
I strayed a bit from the recipe I was found, but it was basically tofu with a little cornstarch and nutritional yeast + sauteed veggies, baked for about 40 min!
I joined a gym back in January and have been attending classes regularly! It’s really tough work.. I’m not an athletic person at all and I am absolutely the weakest in class every time, so it can be a bit discouraging on occasion, but.. I have been seeing some results and feeling a bit stronger, which has been empowering in that regard! >< I’ve really been trying to watch what I eat and get in some exercise lately!
Vegan lunch in the park! Lentils with spring mix, tomato, and avocado!
Some vegan shojin ryori I’ve made recently! Hijiki salad + some instant vegan yakisoba with assorted veggie sides!
I made some vegan biscotti using this recipe as a template but I sub’d pumpkin puree with egg replacer, omitted the orange zest, and added pistachios and anisette extract!
I had really been craving these but never tried baking them for myself.. It turned out great!
I made some spaghetti squash with (cashew based) Alfredo sauce and roasted brussel sprouts last night! ^o^/ The lighting + presentation was not so great, but it tasted wonderful!
I tried making the Creamy Kale Salad with roasted chickpeas and shallots last night and I was surprised by how much I liked it! (The beets did indeed taste like candy!)
My dinner tonight: Vegan Mushroom Matar Masala (recipe by the wonderful Vegan Richa)
It was SO good! I love Indian food! (╥﹏╥)
