@ 70% of you
200g ground almonds
200g ground hazelnuts
140g brown sugar
5 eggs
1 Tbsp Honey
Lebkuchengewürz/ gingerbread spice (pre mixed or cinnamon, cloves, coriander, ginger, cardamom, nutmeg, whatever spices you like tbh)
Pinch of salt
Bake at 150°C for 20-25 minutes
Glaze with chocolate if you want
You're welcome
I have an alternate recipe if I may
250 g molasses (sugar beet syrup in the original recipe)
200 g of sugar
100 mL water
Simmer in a pot until all the sugar is dissolved then add
300 g Butter or margarine
Let melt, then add
Lebkuchengewürz (same as above),
1 tsp baking soda
A pinch of salt
10 g cinnamon
Let cool then add to
750g of flour
Knead, let rest in the fridge overnight, at least 10 hours, then roll to half an inch thickness, cut into whatever shape desired and bake for ~12 minutes at 190 degrees Celsius
I like to glaze them with a mixture of powdered sugar and a teeny bit of water
This produces a darker type of Lebkuchen, a bit less soft and fluffy like the above, which is an example of Elisenlebkuchen
