My favorite diner food is these Hot Roast Beef Sandwiches, easily made at home in the slow cooker with the gravy made at the same time!
Tofu Chicken Recipe!
Very tasty, based on the recipe by Jules at The Easy Vegan. See his awesome video here: https://www.youtube.com/watch?v=LwDYQxdc5_Q It is a bit time consuming, but it’s so much cheaper to use a block of tofu than a pre-made alternative, and once you get a routine going it works very nicely. Now you can make very satisfying meals with tofu that hardly tastes like tofu!
INGREDIENTS
1 block firm tofu
1 tbsp cornflour
Olive oil
Marinade (or use another of choice)
¾ cup vegetable stock or water
4 tbsp soy sauce/tamari/coconut aminos
1 tbsp nutritional yeast
Freezing time: 1 day + 1 day for defrosting Active time: 10 minutes Marinading time: 30 minutes Cooking time: 20 minutes
METHOD
1. Freeze tofu as soon as you bring it home. The day before you are ready to prepare the chickeny tofu, remove tofu from freezer and place in fridge to defrost.
2. When tofu is defrosted, remove from packet and press using your preferred method for at least half an hour. Cut tofu into bite-size pieces. These could be strips, broken chunks, cubes, or triangles.
3. Combine marinade well. Place tofu in a well-sealed container and pour over marinade. Marinade for at least an hour or overnight. If you are marinading for a shorter time, add more soy sauce to intensify the flavour quicker.
4. Preheat your oven to 180C. Pour off marinade into another container (you can save it in the freezer to marinade more tofu). Pat the tofu dry and place in a bowl. Dust over the cornflour and toss to coat. If there are dry patches of flour, rub pieces together to remove.
5. Place tofu on a tray and drizzle over olive oil, toss to coat. Then, evenly space the tofu on the tray and place in oven for 15 minutes. Turn the tofu and return to oven for 5 minutes.
6. When cool enough to touch, place tofu on a cooling rack. When completely cool, store in fridge or freezer until ready to use. Add to a saucy dish and cook until the meal is to your liking!

Like I really just blew up a whole situation in my head and when I actually spoke to my friend abt it, I was just like oh. It wasn’t that serious at all lol. Literally had to prep myself the night before to bring the thing up and it was “resolved” in like 2 minutes: also put resolved in quotations cus there wasn’t really a problem to begin with…
Idk my abandonment issues are still so deeply rooted and sometimes I feel stuck. Like my anxious attachment behaviors/thoughts are severe. I guess the question is how to address these roots? I know it’s shame…prob have to actually talk abt shame with my therapist huh.

Who is Airmed?
Airmed, also spelled Airmid is a member of the Tuatha Dé Danann and an Irish goddess with all of the knowledge of herbalism. She is mentioned in the Second Battle of Magh Tuiredh as she healed those who were injured in the battle. Airmed is one of the deities whose incantations was said to resurrect the dead when sung over the Well of Sláine.

Following the death of her brother caused by their own father due to his jealousy over his son’s healing talents, Airmed goes to visit the grave of Miach. There she found 365 herbs and was taught their secrets to healing. She spread out her cloak and began to organize them but before she could finish the task her father found her. Jealous again of his child’s talents he picked up the cloak and scattered the herbs, leaving their sacred knowledge lost to history. Only Airmed remembers all of the herbalist knowledge.
The significance of the number 365 may have been as such: “one for each of his joints and sinews, one for each day of the year, one for each illness that ever had been or ever would be.” (Story Archeology)
Well of Sláine essentially translates to “Well of Health”
Airmed and Miach are both etymologically linked to measurements of grain or cereal. Airmed is more of a measurement and Miach is more of the thing being measured (Story Archeology).
In Old Irish, there were no distinctions made between herbs and vegetables and they were generally all considered “useful plants”.
This would make sense as Airmed’s story involves her organizing and counting these useful plants.
I HIGHLY suggest you look into Story Archeology because the hosts of the podcast go into detail about the etymology and possible meanings behind the story of Airmed.

🍲 Cock-a-leeky Soup 🍲
Cock-a-Leeky soup (chicken and leek) is a really old and traditional Scottish soup. I make it with rice but you can add pearled barley instead if you want. This Scottish soup is traditionally served as the starter on Bruns night. It is delicious as an autumn and winter soup. I have to say it is really light so you might need something on the side to make it a full dinner. I love eating them with fresh warm cheddar scones.
I discovered this soup not a long time ago and I love it. It is really easy to do and really cheap as well. It makes my home smells really good!

🍲 Cock-a-Leeky 🍲
Preparation: 10 minutes
Cooking: about 1 hour
4 portions
Ingredients:
1 chicken breast
1L vegetable broth or chicken broth
1 big leek (or 2 medium size ones) cut in thin slivers
1 onion cut in thin cubes
2 thym sprigs
6 dry prunes cut in small cubes
50g dry rice (about 1/3 cup)
20g butter (about 2tbsp)
1 glass of dry white wine (optional)
Recipe:
Bring the broth (and the wine) to a boil, add the chicken and let it simmer.
Cook the leek and onion in a pan with the butter and the thyme on medium-low heat for about 15 minutes or until they are transparent, tender and smell really good
Pour the vegetables into the broth with the chicken. Let it simmer for about 30 minutes
Take the chicken breast out of the broth and shred it in fine pieces than put it back to the soup
Add the rice and the dry prunes and let it simmer for 15 minutes
Enjoy!
