Daisies usually mean purity, new beginnings, and first loves. In the victorian era, they also meant being good at keeping things hidden. These are Aziraphale's flowers. He's blinded by heaven and his trauma and his want to start again in heaven with – or without – Crowley by his side.

Hyacinth can mean a desire for forgiveness and sincerity – as in the history of Apollo and Hyacinth. These are Crowley's flowers. He's been dancing with Aziraphale for thousands of years, and that's their code, but he craves sincerity and craves for more than the promise in those words. He wants and desires more than a promise.
