How to make a Frying Pan Ratatouille just like you find in Animal Crossing: New Horizons…and another thing. A movie. Forget what it’s called. It’s one of the ways you can customize your freshly crafted frying pan. Unlike the in-game version, you can eat this one. Watch it in action here.
What You Need:
Vegetables:
Eggplant
Zucchini
Tomato
Vinaigrette:
1 TBL sherry vinegar
3 TBL olive oil
1 tsp honey
1 tsp brown mustard
The rest:
Tomato sauce
Salt+Pepper
Herbs de Provence or other dried herbs
Slice zucchini, eggplant, and tomatoes into 1/8 inch slices. Set zucchini and tomatoes aside. In a small mason jar, place vinegar, olive oil, honey, and brown mustard. Lid up and shake to combine. Set aside.
Place eggplant on a drying rack and lightly season with kosher salt. After half an hour, flip, and season the other side. Allow to sit for another half hour. Squeeze excess liquid from the eggplant. Set aside with the rest of your sliced veggies.
Lightly grease up a carbon steel or cast iron pan. Ladle in a thin layer of tomato sauce and spread along the bottom of the pan. Should take about ¼-1/3 cup depending on the size of your pan.
Carefully fan your veggie slices along the edge of the pan working towards the center. You can arrange it in any order you like, but try to at least keep it consistent so that it cooks evenly. Brush with reserved vinaigrette, and season lightly with salt and pepper. Sprinkle on dried herbs of choice.
Place pan in a 450 degree oven and cook for 10-25 minutes or until vegetables are lightly golden. Allow to cool slightly for about five minutes. Then, you can serve with more sauce and some crusty bread.
