Has the Deltarune character Green affected how you’re planning to characterize Sunny in any way? Obviously you’re not just going to redo their design or anything but has it like given you any ideas for character moments or jokes?

Nope! Sunny's story and character was planned and outlined long before chapter 5 (and the majority of it before 4, too).

As for jokes and references... Who's to say?
