Made an awesome meal tonight by rummaging through my cupboards and fridge. I was thinking about how I was feeling fancy but am on a really tight budget until payday when low and behold there it was - polenta. Next a can of black beans came into view followed by a can of green chilies and a meal was born. I am feeling incredibly good about this as A) I feel like i've lost touch with cooking lately and B) I have no money to buy food right now.
Ingredients:
Polenta 1 cup or so
Black Beans (1 can)
Pumpkin Puree (1/2 can)
Green Chillies (small can)
1/2 Onion (chopped)
2 Garlic Cloves
1/2 C spinach (chopped)
Salt/Pepper/Amino Acid to taste
1/2 C Cheese (to create cheese crisp)
Lemon
Siracha
Directions:
Preheat oven to 350 degrees. In a medium skillet sauté onions to a translucent state. Add garlic and remove from heat. In a separate oven safe dish combine drained black beans with pumpkin puree. Add in diced Green Chillies. Next chop the spinach and add it to the mix. Add salt/pepper/amino acid to taste. Put mixture into oven until warm.
On a baking sheet layout all of the cheese and bake in oven until crispy brown.
Heat up a dish to medium-high on the stovetop. Make polenta according to package. Create a log out of the polenta and slice into pieces. Place pieces in the skillet and cook until brown on both sides. Sqeeze a tiny bit of lemon juice on both sides and cook for about 45 seconds more on each side.
Put all items together on the plate and garnish with siracha if desired.
