My Saturday:
Made an amazing breakfast today, Cinnamon Apple Pancakes with an egg and cheese side! This whole breakfast was only 6 Smart Points!! It was so yummy and healthy. After making breakfast I felt the need to get out of the house after being cooped up by the rain, so I ran some errands and went on a walk in the park! It was so pretty after the recent storm, leaves were everywhere and everything felt fresh and alive. I found beautiful spot along my route, it reminded me of something out of a fairy tale!Ā I did a variation on my normal 3.1 mile loop, still doing a 5K but taking a new route. Being in nature always makes me feel rejuvenated and ready to finish my work for the week.
Pancakes and Topping:
ā cup Kodiak Cakes (3 smart points)
ā cup water
Cinnamon
Truvia
Apple
Olive Oil Cooking Spray
Combine the Kodiak Cake mix with water and cinnamon, mix together well. Spray your pan with cooking spray and then cook mix over low heat, this made two pancakes. While cooking chop up the apple into cubes and add cinnamon/truvia to taste. Cook in microwave until tender about two minutes. Plate pancakes and put apples on as topping, enjoy!
