Been a long time since I picked up a pastry bag. Not perfect, had to rush since the baby woke up, but I am so excited just to have made something again!

Fried mushrooms

Tip: salt the mushrooms and let them sit for a while before breading.

For the breading, mix rice flour and water to make a thin paste. Add seasonings if desired. Dip the mushrooms in to coat well.

Then roll the mushrooms in panko or semolina (seasoned to taste). If you like lots of breading, dip again in the rice flour slurry, then again roll in crumbs.

Then fry in 350F oil. I like grapeseed oil for frying, or peanut oil.

Let cool a bit before devouring--much hotter on the inside. And juicy and steaming.

Horseradish dipping sauce, honey mustard, cheese sauce or ketchup recommended.
