Epic Mix Recipe
This mix has been a life saver for our family! I thought of calling it Ultimate Mix, but my teenagers love the word epic right now, and I’m grateful that, in their teendom, they think that life is epic, so I’ll go with epic. Miracle Mix would also be appropriate; such a merciful and gracious gift of sustenance from the Lord.
Ingredients:
2 cups cashews
2 cups either almonds or pecans (I always make two batches at once, one with almonds, the other with pecans.)
6-8 T unsweetened cocoa powder (I vary the amount, depending on what sounds good at the time.)
2 cups chipped coconut (unsweetened)
2 cups dates (loosely packed)
Add nuts to the blender. Spread the cocoa powder around on top of the nuts, which helps the cocoa blend in more thoroughly, and keeps it from choking me when I open the blender lid. Cover with the coconut. Blend for a minute or so, to begin breaking down the nuts. Add the dates and continue blending until the mix is a crumble. If you blend longer, you will have a more paste-like consistency; which you can form into bars and freeze. We prefer to eat it as a crumble.
Reagan will read this and remind me that cashews are, technically, not nuts. Point taken in advance, but for ease of writing, they will be herein referred to as nuts.
I have low blood sugar issues and can eat this all on its own for breakfast or a snack… it truly has been a life saver for us! I almost always carry some with me in a baggie. Praise God from Whom all blessings flow! Enjoy!
