Wheat Free Craziest cake
Its crazy because the batter is crazy thick!
1 .5 c gluten free flour I used nemaste
1tsp baking soda
1/2 tsp salt
3/4 cup sugar
1Tbsp apple cider vinegar
2 tsp vanilla
6Tbsp vegetable oil I used safflower
11/4 c water
mix all dry ingredients in separate bowl and mix wet ingredient in separate bowls and combine after mixing blend well. batter will be thick spread in a 8 or 9 inch cake pan ake at 350 for 35 mins until toothpick comes out clean. a nice icing would make it taste better. LO likes it he has never had real cake so its good to him and I like it to. my only dislike is the taste of the flour I think it might be the rice flour that comes thru to much. add 4 TBS of cocoa for a chocolate one. you can also substitute the water and used almond milk.I have it doesn't make much of a difference taste wise (the almond milk).
I bit gummy but not bad. Doesn't taste like regular cake. It's different but 😋good. Don't know what to compare it to. The denser the dough the more it taste like an alternative to wheat brownie.
Taste: not bad. It is a bit gummy. If you stick a toothpick in the middle you'll get stick cake on it. it is moist. the bottom seems to be getting stick as it cools looks a bit wet even.
Done toothpick comes out clean.
@350 for 35mins #uglycake.
So i keep seeing these supposedly allergy free cakes online. I get all excited about them just to find out that most of them if not all use Wheat and they all say may substitute for gluten free flour.To which I say "Yay!!" Well, all of the ones I have tried do not work for a non wheat flour mix. Every time I make the cakes the batter is super thick it is almost the consistency of a soft playdoh. and its very gummy. the first cake was so thick i could not get it out of the mixing pan it was too close to a bread dough. the second time i add more liquid and it was a bit better but still gummy i don't think more liquids will help as it seem like the liquid doesn't want to mix with it a point. and just sits around it. the store bought mixes work a bit better but since i need to omit eggs, dairy, they don't work as well and the taste is way to strong which is why a chocolate homemade cake is always my go to option. This time i ran out of cocoa! so i made a plain vanilla added more vanilla than usual to help the taste. here are some pics of the cake. I am on a mission to find one that taste like regular cake not as dense. I call this "Yummy ugly cake"
