Yaki Soba Sauce Recipe - Wagamama
'this recipe makes enough sauce for several servings. you can store the leftovers in the fridge for a few weeks'

ingredients
100ml (3½fl oz) light soy sauce
2 teaspoons salt
2 teaspoons sugar
1 teaspoon dark soy sauce
instructions
put all the ingredients in a small pan and bring to the boil lower the heat right down and simmer for 10 minutes
Noodles associating with long life, how? Originally, noodles were served in larger communities within varying Asian countries in which the chefs were ex-convicts given another chance in life.The noodles were made thick and short but eventually became thinner and longer throughout time to symbolise the chef’s extended patience in serving large communities, his extended life and long gratitude to the community. The noodles we all love to eat has so much more meaning than it seems.
Yaki Soba Recipe - Wagamama
serves: 2
time: 30mins
ingredients
110g (4oz) soba noodles
2 tablespoons yaki soba sauce (see our sauce recipe)
1 small onion, trimmed and cut into 2.5cm (1inch) lengths
large handful of beansprouts
15 small cooked + peeled prawns
2 tablespoon vegetable oil
1 boneless, skinless chicken breast cut into strips
½ red pepper | trimmed, deseeded + thinly sliced
½ green pepper | trimmed, deseeded + thinly sliced
2 eggs beaten
for the garnish
25g (1oz) pickled ginger / gari
1 tablespoon dried shallots
½ teaspoon toasted sesame seeds
instructions
cook the noodles in a large pan of boiling water for 2 – 3 minutes or until just tender
drain thoroughly and refresh under cold water
put the yaki soba sauce, the onion, spring onion, beansprouts and prawns in a large bowl and mix the noodles
heat a wok over a medium heat for 1 – 2 minutes or until hot and almost smoking and add the vegetable oil
add the chicken and peppers and stir fry for 2 minutes until the chicken is cooked
add the noodles and vegetables to the wok and stir fry quickly for 3 minutes until warmed through
add the eggs and continue to stir fry for a further minute or until the eggs are just cooked
serve with the pickled ginger, shallots and sesame seeds

Chicken Chilli Men - Wagamama Recipe
serves: 2

ingredients
275g (10oz) soba noodles
3 tablespoon vegetable oil
2 boneless, skinless chicken breasts | cut on the diagonal into 1cm strips
1 green pepper | trimmed, deseeded + thinly sliced
1 small courgette | thinly sliced
½ red onion | peeled + thinly sliced
4 spring onions | trimmed + cut into 2.5cm lengths
300ml (½ pint) chilli sauce (see recipe below)
instructions
cook the noodles in a large pan of boiling water for 2 – 3 minutes or until just tender drain thoroughly and refresh under cold water
heat a wok over a medium heat for 1 – 2 minutes or until completely hot and almost smoking and add the vegetable oil
add the chicken, pepper, courgette, red onion and spring onion and stir fry for 3 – 4 minutes until the chicken is cooked and the vegetables are lightly coloured
add the chilli sauce and bring to the boil divide the noodles between 2 bowls and top with the stir-fry
tonkotsu instant ramen
Thai-style Prawns - Wagamama recipe
serves: 2

Ingredients
100g wide rice noodles
1 tablespoon vegetable oil
1 garlic clove, peeled and finely chopped
2 lemongrass stalks , outer leaves removed, finely chopped
1 egg, beaten and seasoned
150g raw, peeled prawns
1 tablespoon fish sauce (nam pla)
1 teaspoon soft brown sugar
2 teaspoons soy sauce
large handful of roasted peanuts, coarsely chopped
handful of beansprouts
small bunch of coriander, leaves picked
Instructions
cook the noodles according to the instructions on the packet, drain and refresh under cold water
heat the oil in a hot wok and stir fry the garlic and lemongrass for 30 seconds. add the egg, swirl it around for 30 seconds, then add the noodles , prawns, fish sauce, sugar soy sauce and half the peanuts. stir fry to cook the prawns, about 2 minutes
add the beansprouts and coriander, check the seasoning and toss for 1 minute to en sure that everything is heated through
serve with the remaining peanuts scattered over the top.
Chicken Ramen - Wagamama Recipe
serves: 2

ingredients
2 boneless, skinless chicken breasts
vegetable oil, for oiling
salt and white pepper
250g (9oz) ramen noodles
1 litre (1 3/4 pints) chicken or vegetable stock
2 pak choi, trimmed and roughly chopped (or 2 handfuls of baby spinach leaves)
12 pieces menma (canned bamboo shoots), drained
4 spring onions, trimmed and finely sliced
instructions
preheat the grill or griddle pan lightly oil and season the chicken breasts and grill for 4 minutes on each side, or until cooked through allow to rest for 5 minutes, slice on the diagonal and set aside
cook the noodles in a large pan of boiling water for 2-3 minutes until just tender drain, refresh under cold running water and divide between two bowls
heat the chicken or vegetable stock until boiling
put the pak choi on top of the noodles and ladle in the stock top with the sliced chicken, menma and spring onions
Pad Thai noodles, wagamama style
Spiced Beef Noodle Recipe - Wagamama
serves: 2
time: 30mins
200g udon noodles
200g beef sirloin or rump, cut into strips 5mm thick
1 tablespoon cornflour
salt and white pepper
2 tablespoons vegetable oil
3cm piece of ginger root , peeled and grated
4 handfuls of baby spinach
2 spring onions, cut into 4cms lengths
1 tablespoon soy sauce
1 red chilli, deseeded and finely sliced
2 teaspoons toasted sesame oil
1 teaspoon sesame seeds, briefly toasted in a hot dry frying pan
instructions
cook the noodles according to the instructions on the packet, drain and refresh under cold water
put the beef, cornflour and salt and pepper in a plastic bag and toss the meat to coat. set aside
heat the oil in a hot wok, add the ginger and cook for 30 seconds. add the beef and stir fry for 2 minutes, or until the beef is just cooked
add the spinach, spring onions and 1 tablespoon of water and toss for 1 minute so everything is just wilted,. add the soy sauce and chilli. taste and adjust the seasoning. add the noodles, toss to ensure that everything is combined and top with the toasted sesame oil and sesame seeds
Spinach and Soba Noodles recipe - Wagamama style
serves: 2

ingredients
100g soba noodles
1 tablespoon vegetable oil
3 garlic cloves, peeled and mashed
3cm piece of ginger root, peeled and grated
250g baby spinach, washed
1 tablespoon oyster sauce
1 tablespoon toasted sesame oil
juice of 1 lime
2 teaspoon sesame seeds, briefly toasted in a hot, dry frying pan
1 chilli, deseeded and finely chopped
instructions
cook the noodles according to the instructions on the packet, drain and refresh under cold water
heat the oil in a hot wok and stir fry the garlic, ginger and spinach for 2 minutes. add the noodles, toss once, remove from the heat and stir in the oyster sauce and sesame oil
squeeze over the line juice and serve with the sesame seeds and chilli scattered over the top.
