After not posting for too long due to university- and general life stressors, I’m finally able to post new food pictures again on this blog. I’m really really sorry for not replying or posting new content for so long - it wasn’t intentional and looking back I wish I would have continued my blogging here over the past months… would have probably been beneficial for my overall well-being. Anyways, can’t change that anymore, but just wanted to let you all know that I’m back on here and will try to keep up with food photography and creating plant based recipes. 

Pictured is my super summery indulgent plant based breakfast bowl consisting of fresh strawberries, caramelized granola and creamy homemade vanilla-coconut creme. (The flavors are actually so rich that this bowl could be a dessert as well.)

If anyone has any ideas etc for new recipes or the next photoshoot, please comment or write me a message!! I’m always really happy to use ideas of all you awesome guys and actually realize them! Thanks in advance!! xx Amber

Vegan Guacamole Burgers are the best thing ever. I’m sorry for posting quite many burger pics (sweet potato burgers last week, now guacamole burgers) right now, but as it seems I’m currently a bit obsessed…  Pictured is a dark/whole wheat ciabatta-bun stuffed with homemade garlic guacamole, cucumbers, rocket salad, a vegan burger patty topped with melted “cheese” and a fair amount of barbecue sauce plus some cute baby tomatoes. Thanks to my sister Julie for being my hand model with her rad nail polish…! Would you be interested in a burger recipe? Cute vegan strawberry - chia pudding parfaits topped with fresh strawberries and a bit of chocolate granola: super creamy, filling and so pretty to look at! When my mom woke me up last week, she actually gave me one of those cuties (which she made herself, I’m the reason she is addicted to chia seeds right now…) the second I opened my eyes and seriously, that was a nice sight to wake up to, so I jumped out of bed to get my camera and take a photo. Beautiful little flowers from some weeks ago when I visited my grandma and bought way too many pumpkins to make tons of pumpkin soup. 🌸 Just wanted to apologize for being absent those past weeks, I was a bit stressed with uni applications and lots of babysitting, so I couldn’t answer any questions or post new food pics/recipes… BUT NOW I’M BACK! Does anyone have any idea what I should do in my next food photoshoot?

Hey guys, 

sorry for my long absence on this blog - I’ve started uni some time ago and moved to another country, so I lost motivation in actually spending quite much time in the kitchen and taking pictures of recipes etc, as I was/am really stressed from my studies. But I just realized that I wanna keep this great blog (with so many great followers and support - seriously guys, you are the best!!) and be more active again! :)  So, if you have any ideas for the stuff I should do next etc., please feel free to tell me - either comment or write me an ask/message, whatever you like!

06.06.2016: My cute small bullet journal from Leuchtturm1917 plus some creamy hot chocolate in the background to sip from while decorating and planning the journal. Today is such a sunny and hot day, I’m really not used to great weather anymore…! Last Friday I had my first own photography vernissage, it was a lovely evening (feel free to ask me any questions about photography etc.) and I already could sell some of my photos, so it was a good weekend!  Hope you had a nice weekend as well, rock your monday, xx Amber :)

01.08.2017: Just came back from spending 10 days in Italy at my relatives beautiful place next to the ocean. Currently looking through all the pretty pictures I’ve taken and listening to the wonderful soundtrack of “The Danish Girl” by Alexandre Desplat and the rain outside. My second year of uni will start in around 4 weeks and I’m quite desperate to not repeat the dumb mistakes I’ve done in the first year, but let’s see how well this will go. Recipe for the “Royal Golden Pinkness” nicecream from one of my latest posts (find it here): • raw & really rich and creamy in flavor & texture • vegan & without any animal byproducts, so it’s good for the environment & not harming anyone or anything • consists of just natural products coming out of nature • healthy & great as a yummy & fancy - tasting treat/dessert or regular meal (for example breakfast) • no refined sugars/oil • great for everyone, even little children or non-vegans • easy to make, you don’t need to be a total pro in the kitchen • share it with your friends or family (or both), because if you don’t, you will be terrorized for probably a week (that happened to me and they still ask about the recipe…:)) -> decided to post this recipe, because I received quite many asks about it, so I hope you like it! Feel free to give me some feedback, would make me super happy!! :) Ingredients:  for the nice cream: • around 3 - 6 frozen & ripe (!) bananas (depends on how hungry you are and if you like the finished product to be a snack or main meal) • around a handful of frozen raspberries  • a bit of creamy coconut milk (if you like the added richness of flavor and crunch of frozen coconut cream)  • a tiny bit of cinnamon  • a splash of maple syrup (optional) toppings:  • more frozen raspberries  • a piece of dark chocolate (I used “Willies’Cacao - Peruvian Gold” from the mountains of beautiful Peru) • organic coconut sugar (tastes like liquid caramel when melted a bit)   • a bit of maple syrup (if you like it really sweet) or homemade caramel syrup

- cut your frozen bananas in small pieces and throw them in your high speed blender/food processor   - add the frozen raspberries, coconut milk & syrup - mix everything together on pulse until the texture gets creamy, well mixed together and ice-cream-like  - spoon your finished base into a pretty glass or bowl and swirl in the cinnamon - now decorate the beauty with all your lovely toppings and get creative - there are so many different options! - enjoy and share it with friends, family or your regular ice-cream addicts! :)  xx Amber :) ( quite new Instagram: littlesunnyday_ )

Banana bread No 2. (”The best”) • vegan • only consisting of whole foods coming out of nature • hclf (high carb, low fat) • no refined/processed sugar, only natural sugar (coming from dates) • the absolute best! Really delicious and fluffy and sweet with a perfect moisture and flavor!! My whole family and friends love it!!  -> Decided to post the recipe because I got quite many asks about it and I promised lovely Danielle from sweeterthanabumblebee to publish it! Oh and it really is the bomb!! :) 

Ingredients: (remotely based on a recipe by thesimpleveganista) - 1.5 cups flour - around 4 teaspoons baking powder - sprinkle of salt - round about 1/8 cup coconut oil (can be replaced by milk alternative) - round about 1/3 cup soy rice milk (or any other plant based milk) - a tiny bit of vanilla extract - 1 small handful finely chopped dates - 4 - 5 bananas (preferably overripe, number depends on how extreme you want the banana flavor) - toppings: I used oats, cinnamon and whole almonds

- Mix all the dry ingredients together in a bowl - in a separate bowl mash the bananas - it’s easier if they are overripe and the bread will get sweeter when the bananas are really ripe - While mixing together the dry ingredients, slowly add the mashed bananas and chopped dates, as well as the milk, coconut oil and vanilla extract  - stir the dough till it gets really smooth and place everything in an oiled bread pan + top  with all your pretty toppings - put into preheated oven for maybe an hour, baking time depends on how moist you want your bread, at 200 °C - enjoy this beauty!! Eat it just like it is or top it with anything you want, I topped mine with creamy peanut butter! Heaven! :)

i know it might sound silly but does your pink fairy-tale nice cream (or anything that has banana+something in it) tastes like banana? it looks so yummy and i really want to try some vegan recipes but the banana's texture and taste always made me feel nauseous :( btw i like your blog and want to try all the recipes some day <3

I’m really sorry for the super late reply - it wasn’t intentional, your message just got a bit lost in my inbox with other messages and I wasn’t active lately due to uni stress… To your question: I would say nice-cream only tastes like bananas if you eat it pure without anything else mixed into it. I could recommend following if you don’t like the banana taste & texture:

- you blend frozen bananas into a ice-cream-like substance, the texture won’t resemble the texture of fresh bananas, so you shouldn’t worry about that 

- add a bit coconut milk/cream (adds creaminess to the texture and its flavor covers the milder banana taste) 

- mix additional fruity flavors into the nice cream base (ex: mango, strawberries, jam)  

- use toppings to add other flavors (ex: peanut butter, dark chocolate pieces, homemade caramel sauce, rawnola etc.)

3.12.2017: So, after a long time I finally post something new again... I decided to post some of my other non-food related photography for once, because I like a balance between different photography genres and I don't want to just restrict and limit myself to one specific area of photography. Pictured (not edited) is the amazingly abstract-looking evening sky in Southern Tuscany, shot out of a moving car. What is nice cream? I see it everywhere

Hope you have a lovely Sunday?So, “nice cream” is another name for banana ice-cream. Basically, you use frozen and ripe bananas, sometimes with a little bit of liquid (water, plant based milk) for this normally vegan and high carb, low fat, super healthy ice-cream to support your food processor/high speed blender.The best thing about “ nice cream” is that you can get really creative when it comes to flavours and toppings. Plus it’s so healthy, you can eat it for breakfast!
