🥕✨ Cozy Carrot Soup ✨🥕
🌿 Ingredients
🥕 150 g carrots (60 cals)
🧅 1 onion (40 cals)
🌶️ 1 tbsp garam masala
🌱 ½ tsp ginger paste
🧄 ½ tsp garlic paste
🍅 1 tsp tomato paste
🧂 Salt & white pepper, to taste
🫒 ½ tsp oil (20 cals)
🍲 Vegetable broth (as needed)
🥥 1 tbsp coconut powder (30 cals)
🌿 Parsley, to finish
1. In a non-stick pan, heat the oil.
2. Add the spices and aromatics (garam masala, ginger, garlic) and let them caramelize gently 🌶️✨
3. Add the sliced onions and sauté until soft and fragrant.
4. Add the chopped carrots and season with salt and white pepper.
5. Once everything is slightly caramelized, pour in enough vegetable broth to cover.
6. Let it simmer for 25–30 minutes, or until the carrots are soft and cozy.
7. Blend until smooth and velvety 🍲💛
8. Return to the pan. Dissolve the coconut powder in 1 tbsp warm water and stir it in.
9. Finish with fresh parsley and serve warm 🌿✨
💛🍲 Enjoy your soothing bowl of goodness for 150 cals! You can restrict while still showing some love to yourself with some tricks and good seasoning 🫰🏻
