BREAKFAST BRUSCHETTA This AMAZING, tasty, veggy bruschetta is a great option for those of you who are after a hearty alternative. Ingredients: 1 slice of sourdough toast. 6 medium sized mushrooms. 1/2 of spinach 1/2 of a red onion Balsamic vinegar 15g of feta Teaspoon of olive oil • Dice the onion and place into a preheated frypan with a teaspoon of olive oil. •slice the mushrooms and place into frypan. •Add spinach to frypan •Toast the bread •once onions are golden brown and mushrooms and spinach are cooked plate up your veg onto the toast. •drizzle over some balsamic vinegar •add the feta Serves 1 #enjoy #breakfast #yummy #personaltraining #training #geelong
Grilled blackened chicken with Quinoa salad. Quinoa salad. Ingredients: 3/4 quinoa 1 red chilli 100g of spinach 2 spring onions Bunch of fresh coriander Bunch of fresh mint 1 avocado 2 limes 50g of low fat feta Chicken X4 chicken thigh fillets 1 heaped tablespoon of allspice 1 heaped tablespoon of smoked paprika 1/2 of a green capsicum 1/2 of a red capsicum 1 tablespoon of olive oil •Place quinoa into a saucepan and add 2 cups of boiling water. Cook for 11minutes or until water has been absorbed. •Lay a sheet of baking paper and sprinkle over 1/2 of both spices • place chicken fillets on spice and cover in spice. Once all four pieces of chicken have been covered, place another piece of baking paper over the chicken and beat until flattened. • heat grill pan and place 1 tablespoon of olive oil and grill chicken 3-4 minutes each side. •while chicken is cooking - place the chilli, spinach, spring onion, coriander and mint into a food processor and blitz until finely chopped. • slice the capsicums into chunky pieces and place into the grill with the chicken. • when quinoa is cooked, rinse with cold water and mix with blitzed salad. Add juice from the limes. Add salt and pepper to taste. • plate up the quinoa salad and add the grilled capsicum. • slice up the avocado and add to salad. • slice up the grilled chicken and place on top of the salad. Add the feta by sprinkling across the top. Serves 4 #enjoy #healthydinner #personaltraining #geelong #melbourne

PREPPED AND READY!! Roasted chicken breast with Quinoa and steamed broccolinni & asparagus. INGREDIENTS: 5 Chicken Breasts 2 cups of white quinoa 2 bunches of broccolinni 2 bunches of asparagus Harissa spice • Cut fat off chicken and slice in half long ways. • Place on oven tray and sprinkle over Harissa to own taste. • Wash quinoa under cold water then add to saucepan. Then add 4.5 cups of water and bring to boil. • Wash veg and place in steamer. Add water and steam until veg is soft on outer later. Serves 6 Prep time: 10 min Cook time: 20 min
