STUFFED PEPPERS
Ingredients:
6 bell peppers
1/2 cup beans, canned
3 tbsp cilantro
1 cup corn
1 tsp garlic powder
1 can green chiles
1/2 tsp onion pwder
1/2 cup tomatoes, petite
3 cups quinoa, cooked
1/2 tsp chili powder
1 kosher salt and freshly ground black pepper
1 tsp cumin
1/4 cup feta cheese
1/2 cup pepper jack cheese
Instructions:
Preheat oven to 350 degrees F. Line a 9x 13 baking dish with parchment paper. In a large bowl, combine quinoa, green chiles, corn, beans, tomatoes, cheeses, cilantro, cumin, garlic, onion and chili powder, salt and pepper, to taste. Spoon the folling into each bell pepper cavity. Place on prepared baking dish, cavity side up, and bake until the peppers are tender and the filling 8is heated through, about 25-30 minutes. Serve immediately!
