Inspired by a recipe for stuffed eggplant, I made an amazing meal. I added portobellos and broccoli to my cooked eggplant and panko. Definitely going to make again.

It's been a pretty busy summer so far. Luckily, organic chemistry is now over and it's time to get back to my activities I've been missing. (Of course we ran a 10k while school was still in session; I couldn't completely stop my fitness routine.) we had a wonderful race for the brain tumor alliance on Roosevelt island.
