Ina Garten's recipes are always amazing - simple and tasty. She uses a "bacon wrap" to roast her chicken.
I made this recipe with a free-range, heritage breed chicken and nitrate free bacon. The skin was so crispy and having roasted garlic in addition to the chicken was a treat. I highly recommend this recipe.

Paleo day 13
Sorry I skipped a lot of days - I spent most of the week attempting to put together this impossible futon that boyfriend and I ordered on overstock. It took 3 days (well, evenings after work). I had to skip dinner one of the days because I was so determined to finish putting together this damn couch! Also, I've been voraciously applying for jobs so that's kept me busy.
Recap of today:
7 am: smoked salmon and cantaloupe
10 am: egg white omlette with chopped Vidalia onions
12:30 pm: ground chicken (Vietnamese style, so fish sauce, chillies, and lime) in a lettuce wrap with a radish/carrot/cilantro slaw, some cherries
3 pm: a piece of dark chocolate and a few almonds
5 pm: egg salad with omega-3 mayo (which is sooooo good btw - I made it at home!)
Tonight for dinner I'm going to have some red wine. Because I deserve a treat. Because I've already lost 8 pounds since I've started!!!! I marinated some grass fed sirloin (cut thin) from this recipe from Mark's Daily Apple. I stuck to his recommendations, but I added a tablespoon of gochujang, a Korean chili paste. Asian pear is not in season so I used a regular brown pear. I did not use blackberries because they are hella expensive and I'm on a damn budget, y'all. I'm going to eat this with whatever leftover veggies are still in the fridge - some kale salad and roasted cauliflower.
I'm really happy with this Paleo lifestyle. The only time I felt low energy was yesterday afternoon, but I did a really hard workout in the morning and after I had a protein-kale-spinach-green apple juice I felt better. I haven't been drinking (alone at home) as much and I'm getting to bed earlier and sleeping more soundly. I feel like a crazy proselytizing Baptist - I keep talking to people at work, mom, in-laws, everyone and trying to get them to join my bandwagon!!!
I made this shrimp curry on Sunday and it was fantastic. The only change I made was to add 1/2 a can of coconut milk as the shrimp simmered in the gravy. Mmmmmm delicious. Highly recommended.
Paleo day 8
I did really well today.
1 pm: coffee with almond milk and agave syrup, ham/spinach/Vidalia onion omlette, cantaloupe
7 pm: grilled grouper, arugula salad with sunflower seeds and cherry tomatoes, cantaloupe salsa, glass of rose
Yeah. That's all I ate. I also took a long walk around the neighborhood with boyfriend to a) find tamarind paste and b) get some more veggie starter plants to put in the back yard. The good thing is I ate when I was hungry, and I was only hungry those two times.
Sunday dinner!
Oh grouper, so expensive but so delicious. A couple of friends came over for Sunday dinner in the back yard (also I discovered today that the giant useless bush in the yard is a giant raspberry bush! Score ten points for Paleo!). I made a grilled grouper and they brought greens from the farmer's market for salad.
Recipe for the grilled grouper:
3 filets grouper
2 limes (and zest of 1)
3 cloves garlic
1-2 Thai chilli peppers
1 can coconut milk (I used low fat)
Drizzle the grouper in coconut or olive oil and liberally sprinkle with salt. Chop garlic and chillies and mix with juice and zest of lime. Cover the fish with the garlic/chilli/lime and pour a can of coconut milk over it. Let marinate for up to 24 hours. Grill on a well oiled surface.
I also made a cantaloupe salsa to go on top of it. Recipe follows!
3-4 slices of cantaloupe (chopped)
handfull of chopped cilantro
juice of 1 lime
1-2 Thai chilli peppers
1/2 a red onion, chopped
Mix all ingredients together and spoon on top of the fish.
You can always add more/fewer chillies depending on your tolerance of heat. Next time I make this I'd definitely add more chillies. I usually make a mango salsa to go on top of spicy fish dishes, but I thought cantaloupe would be a lower sugar fruit that would work just as well.
2 raw salads
I made 2 raw salads that have changed my life.
Salad 1: Raw kale salad
Thanks to my friend @freerangenalini, I've been making this kale salad every few weeks. It's so simple: chop up and rinse kale. Run in through a salad spinner or shake out excess water. Drizzle with 2-3 tablespoons of olive oil, zest of 1 lemon, juice of 1/2 to 1 lemon and massage all the ingredients into the kale. This is key because it'll help tenderize the leaves. Add some salt and fresh ground pepper and you're good to go! I used a huge bunch of kale and got 2 clamshells worth of salad.
Salad 2: raw Brussels sprout salad
Cut ends off a bag's worth of Brussels sprouts. Run them through a food processor (so they look shredded, like a slaw) or grate on a mandolin (though this will take forever). Make a dressing with the following ingredients: juice of 1 lemon, 2 teaspoons Dijon mustard, 1 teaspoon agave syrup or honey, 1 tablespoon olive oil. Toss with the dressing and season with salt and pepper. Voila!
Paleo day 7
What a wonderful day!
9 am: 1/2 a burger and a slice of cantaloupe
10:30 am: total body conditioning workout (weights + cardio, intervals)
12:30 pm: a lovely scallion omlette stuffed with smoked salmon and caramelized onions, baby romaine salad dressed with olive oil and cider vinegar
5:30 pm: some mustard/rosemary/garlic grilled lamb and broccoli
6:30 pm: karaoke followed by LAURYN HILL IN CONCERT!!!! Yeah I saw her... she looks amazing (black don't crack, seriously). And she brought some mini-MCs, AKA her children, on stage to rap for us! I had a few vodka sodas.
midnight: I tried to stick to Paleo, but I had the munchies. I ate some sandwich pepperoni, a few slices of provolone cheese, some roasted seaweed, and a burger with that delicious onion sauce the hot dog vendors put on hot dogs... too much sugar...
However, on my first week of Paleo I lost 6 pounds. Thus proving that diet is the foundation of maintaining/losing weight.
Paleo day 6
Awww yiss, I'm getting good at this thing!
7 am: 1/2 a burger and a small slice of cantaloupe
10 am: egg whites with spinach, handful of trail mix
12:30 pm: baby romaine salad with broccoli slaw, 1/2 a filet of salmon en papillote
4 pm: cucumber slices, think thin mixed nuts bar
7:30 pm: shrimp and scallop kebabs, asparagus... aaaand half a bottle of rose wine and 3 more tequila drinks :( I'm letting myself drink twice a week, so this was night 1 of the week.
This is the shrimp and scallop kebab from Rye restaurant in Williamsburg. Rye is yet another restaurant (like Cafe Mogador) that it seems like everyone has been to except me. They offer great Paleo options, like a great grass-fed ribeye for 2 (I might take boyfriend there for that one!) and a beautiful Scottish salmon with peas and pea shoots in a buerre blanc. The sauce on the shrimp and scallops was wonderful - a simple mix of lime juice and Thai chillies. I'm making a similar sauce for grouper tomorrow.
On another note, I went to a beautiful bar near the Williamsburg bridge called Donna. If you live in the city, go there! The decor is gorgeous... as were the people... I had a hard time engaging in conversation with my friends because I just wanted to stare at all the pretty things around me! They also have a Paleo-friendly bar menu and some very boozy, not sweet drinks. Except this zinger I had at the end of the night:
A coconutty Pina Colada-type drink served with tons of crushed ice served in a Hurricane glass. Mmmmm.

Paleo day 4
Here's what I ate today:
7 am: 1/2 a burger and a small slice of cantelope (or is it cantaloupe?), coffee with almond milk and agave syrup
10 am: egg whites with spinach and a small sprinkle of parmesan
12:30 pm: salad with leftover chicken from last night, 1/2 cup blueberries, handful of trek mix (I have very large hands though...)
4 pm: Think Thin mixed nuts bar... is this allowed, btw?
7:30 pm: cured salmon, salad, chicken charmoula, a glass of white wine, macchiato (I should have had an espresso...)
I did pretty well today - but I'm not seeing the dramatic weight loss I saw with Dukan.
Does anyone have any suggestions about how to speed it up initially? Should I cut out fruit altogether for a few weeks? Also it's only been 4 days... maybe I need to be a bit more patient!
Today I went to Cafe Mogador in the East Village and I'm frankly surprised it was my first time there. This place is excellent, with so many options for Paleo. For an appetizer I had the cured salmon with lemon and dill (above). It was so flavorful and tender! And then Rachel Weiss walked in and that made me love the place even more!
Cafe Mogador part 2! (I'm doing this from my iPhone and I don't know how to post 2 photos at once). For dinner I had this lovely charmoula chicken cooked in a tagine (presumably). It was so tender and spicy and complex and it made me so happy to not eat bread. I want to experiment with this sauce this weekend so I'll post a recipe if I come up with a good one. I had a small salad with it - cucumber, lettuce, tomato, scallion, lemon, and olive oil. If you're in NYC and low carb, go to Cafe Mogador.
Paleo day 3
7 am: 1/2 90% lean burger, 1 small slice cantaloupe, coffee with almond milk and agave syrup
9:30 am: scrambled egg whites with veggies
12:30 pm: mustard/rosemary/garlic grilled lamb, romaine salad with broccoli slaw and grape tomatoes, handfull of Trader Joe's ABC trek mix, 1/2 cup blueberries
5:30 pm: think thin mixed nuts bar
7:30 pm: sauteed chicken, cabbage slaw
Drank 1 1/2 liters of water throughout the day
185.4 lbs! Lost 3 1/2 pounds already!
Aaaaand I'm going to see Lauryn Hill on Saturday!
There is nothing more that I despise while low-carbing than chicken. American chicken just doesn't taste good. I can't seem to find real, free-range chicken fed its natural diet in New York that won't break the bank. So, I have to compromise. Chicken is lean, affordable, and a staple of a good low-carb lifestyle, so I'm constantly trying to find palatable ways to prepare chicken. I picked up Annie's Natural brand Shiitake dressing. It's great on salads - it has a nice sesame flavor and the mushrooms add a nice earthiness. So I thawed out a lonely chicken breast sitting in my freezer and marinated it in the dressing overnight. I threw it on a nonstick pan and sauteed until nicely brown. It came out pretty delicious! Searing it well helped seal in the flavor. It's not the juiciest chicken I've had, but it's an easy, tasty Tuesday night dinner with my Korean cabbage slaw.
Annie's makes other good dressings (Asian sesame, ginger, goddess). She only uses plant oils in her dressings, so it's Paleo-acceptable (just don't over-do the marinade). If you've cooked with any of her dressings, let me know which ones you liked!
Seared dorade and Korean cabbage slaw
Dorade (aka sea bream) is so wonderful and easy to prepare. I just do it like the Italians. First I liberally seasoned the filet with salt and pepper. I heated olive oil in a nonstick pan until it was fragrant. I placed the filet skin side up and added the juice of half a lemon as it cooked. Of course, I turned it over to crisp up the skin side.
I've posted a recipe for Korean cabbage slaw before, but it's worth repeating. I made a dressing of 1 tablespoon gochujang (Korean chilli paste), 1/4 cup mirin, 1/4 cup rice wine vinegar, 2-3 tablespoons sesame oil, and some sesame seeds. I ran a red cabbage through the food processor and tossed it with the dressing and 3 finely chopped scallions.
I made a bunch of slaw to snack on throughout the week. Boyfriend really enjoyed this meal (although he's not a big fan of the dorade - he prefers a less "fishier" fish, like salmon). Next time I'd cook the fish in sesame oil to tie the protein and veggies together.
