I have been craving to try some pigtastic eats ever since I first heard The Pork Shop was a part of town.
I finally had the chance the other day. After trying the BBQ pulled pork biscuits I knew these porkers were up to something great. The sauce is a little sweet, kind of Memphis-style, with a great red color. The pan con lechon was mouth-watering at first glance. They marinate the pork with fresh lemons and oranges, not bottled mojo, and it shows in the taste. So bright, and fresh.
For dessert, only one on the menu, and it's the only one needed. Sweet potato pound cake with a maple glaze and powdered sugar is the right amount of sweet to finish off with. You're going to want to hog all the food for yourself when trying what The Pork Shop has to offer. Find them on Facebook here.
- Lemony Chicken Salad -
A store bought, prepared chicken is the savior on many nights; lemon-pepper roasted chicken in particular makes a great chicken salad. This will make the bird last for a week in your refrigerator. Great eaten alone, as a sandwich, or even on some pizza dough and baked.
Could also be done with some diced, salted and peppered chicken breasts. Just cook over medium heat with some olive oil for 7-minutes and add the juice of an entire lemon while cooking.
1 store bought lemon-pepper roasted chicken (pulled apart)
1 Green apple (peeled, sliced, cubed)
2 celery sticks (chopped finely)
2 T celery leaves (chopped finely)
2 T tarragon (chopped)
1/4 cup toasted pecans
Handful of dried cranberries
1/2 cup mayonnaise (preferably with olive oil)
1/2 cup Greek yogurt
Juice and zest of one lemon
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 T sugar
Step 1. The most difficult part of this recipe is the pulling apart of the chicken. Once that is done add to a large bowl and add diced apple, celery and leaves, along with chopped tarragon.
Step 2. Mix ingredients with a spoon and add pecans, cranberries.
Step 3. Add mayo, yogurt and juice + zest of lemon. Mix until combined and finish with salt, pepper and sugar. Good in the refrigerator, covered, for up to a week.

- Spinach + Queso Frito Salad with Pears and Walnut Balsamic Dressing -
You might think that fried cheese would defeat the purpose of a salad but a variety of flavor combinations makes this appetizer one to remember. The cheese gives great saltiness and melts in your mouth while the pear offers a nice sweetness. The dressing is an idea conjured from the book "In the Devel's Garden: A Sinful History of of Forbidden Food" by Stewart Lee Allen. There, the author shared a great tip for a pignoli sauce by soaking pine nuts in red wine vinegar for four hours.
1/4 cup walnuts
5 T balsamic vinegar
2 T honey
1/4 cup olive oil
1/4 cup warm water
1/2 block of queso blanco
1/4 cup canola oil
1/2 9oz bag of prewashed spinach leaves
1 Bosc pear (or whichever) (peeled, diced, cubed)
1/4 cup croutons
Step 1. In a small bowl add walnuts, balsamic vinegar and honey and let the nuts soak for 30 minutes. After, puree contents of bowl in a blender and add olive oil and water and blend again. Sprinkle with a dash of kosher salt and ground black pepper. The dressing should be thick because of the walnuts. If needed add a little more olive oil and water.
Step 2. Heat oil in a frying pan on high heat. Once hot add queso blanco and fry for 2-3 minutes on each side or until cheese is crispy and not melted. Remove cheese from pan and with a sharp knife. Cube cheese to small squares.
Step 3. In a large bowl add spinach leaves, pear, fried cheese cubes and croutons. Lightly spoon dressing over and mix. Enjoy!
