The Future of Food

Kids can be fickle about what they eat, especially when it comes to eating vegetables. Those of them who chow down willingly on their broccoli or salads are the exception to the rule, as many simply won’t even suffer the sight of green foods on their dinner plates. However, there’s an adage that I like to repeat to myself every time I come across a food I don’t like: there’s no such thing as tastes we hate; there are only tastes that we don’t like YET. Yes, you heard that right, I, along with many experts in the field, believe that all tastes are acquired, and that those tastes we abhor are simply as yet unfamiliar to us. The more we try something, the more tolerant we come to be of it. Of course, this rule doesn’t apply to mushrooms, which are just gross all the time…

So what’s the point of bringing this up? Well, it is to hit home the importance of teaching kids at a young age to incorporate greens into their diets, something that we at Nutritower take very seriously. And to that end we say, “why stop there?” Instead of simply introducing grade schoolers to vegetables and urging them to at least give them a try, we believe in having those students directly interact with their food, learn where it comes from, how it grows, why it looks and tastes the way it does. By demystifying food- and veggies in particular- we hope to facilitate the relationship between kids and the foods they otherwise may not have given a chance to. Moreover, the habits and behaviours we acquire in childhood inform our adult selves, so learning early about the value of food and food cultivation can mean good eating habits all our lives long!

But here’s the real kicker, and here’s where we at Nutritower get truly excited: The world is trending toward a more plant-based diet, and as such, we’re entering a period where heightened awareness of vegetable growth, food eduction, and the like will seriously come in handy. In Canada, nearly three million people (or about 10% of the population) describe themselves as vegetarian or Vegan (according to a recent Dalhousie University study). Of those people, the majority are under the age of 35. To put that number into perspective, there are three times as many vegetarians in Canada today than there were 15 years ago, when a similar study was conducted. What this means is that more and more Canadians are turning to plant-based diets and the trend is starting with the younger generations. It is more than likely that by the time grade school children grow up and start families of their own, meat eaters will be the minority in this country.

So to wrap this up, educating school-aged children on the value of vegetables and imbuing them with the know-how to do it themselves when it comes to food cultivation, is not only great policy, but it’s also very much on the right side of history. If children are our future, and vegetables and plants are the future of food, then we love to be the forward-thinkers that link the two. Let’s continue to teach kids about the value of greens so that we can all embrace a brighter, greener future.

Getting Personal With Your Plants

My name is Rebecca. I’m halfway through my undergraduate degree at McGill University in the Faculty of Science. I do not have a green thumb. You won’t even find a succulent in my apartment. Yet here I am at a company that is all about bringing plants into the home to create a more meaningful relationship between people and their food. When I was recently asked to reflect on how I got here, it made me realize how my habits have changed in a few short years.

My interest in being more eco-friendly began with researching the zero waste lifestyle. When I realized how much waste is produced every single day, reducing my waste quickly became my newest personal research project. It only took a few articles to open my eyes to a completely new approach as a consumer. Now, by no means do I live a “zero waste” lifestyle, nor am I vegan. However, thinking sustainably has become part of my daily life. It led me to join my university’s environment committee and seek out other opportunities (such as the one here at Nutritower!) where I can start conversations about sustainability.

Sustainability is a pretty big buzzword right now. It goes hand in hand with climate change, another hot topic (literally). To get the sense that this is something people care about, look no further than the Climate March that took place right here in Montreal. It was amazing to see thousands of people united together, protesting the government’s lack of action towards combating climate change. But this sense of urgency tends to stay confined to only the “bigger conversation” where phrases like “carbon tax” and “renewable energy” get thrown around.

I want everyone to bring sustainability into the small everyday conversations. My personal motto is “Make it simple but significant.” While I don’t think that climate change has a simple solution, I believe that people can make easy changes in their daily lives that will have a larger impact.

Want to reduce water consumption?

Did you know that the food that we eat also is the largest contributor to water consumption on the planet? In fact, according to UNESCO’s World Water Assesment Program, about 70% of all water drawn from rivers, lakes, and aquifers is utilized for crops, and this number goes up to 90% in developing nations.

Consider this: a conventional head of lettuce produces a water footprint of 65 liters in order to reach your table. 65 liters!! And lets not even dare talk about beef production. The numbers are truly shocking at 15,500 liters per 1 kilogram – enough to fill a small swimming pool.

I know it’s hard to see the bigger picture sometimes, but let’s just take lettuce as a benchmark for a quick calculation. If an average household eats 2 heads of lettuce a week that’s the equivalent of 6760 liters of water. Multiply that by a city the size of Montreal and it’s 1.7 million households and we are looking at 11,492,000,000 liters of water.

In comparison, Hydroponically grown lettuce can reduce the amount of water consumed by 60% while increasing yields tenfold. It really is a win/win. Add to this the ability to localize production near major cities and the questions start to arise as to why we’d even buy conventionally grown lettuce at all. However, we must not forget that greenhouse grown lettuce has its own downsides: lighting and ventilation costs, higher labor costs, and fertilizer runoff can add to the overall impact of large scale hydroponic farming operations.

Now consider this: by growing in our own homes using a Nutritower we can reduce the amount of water used to produce a head of lettuce from 65 liters down to a meager 1.6 liters. Because it uses a small closed loop system it allows for water recycling at an extreme level. And this adds up over time! one family using one Nutritower to only grow lettuce, a relatively low consumer of water on the agricultural scale, would mean a savings of 6600 liters!

So there you have it. Growing some food hyper-locally can have a tremendous benefit to our environment by contributing to water conservation in a major way. The bottom line is that in our opinion tower to table is always going to be a more efficient, healthy, and environmentally friendly to grow food in our rapidly urbanizing world.

How far does our Food Travel?

Have you ever taken the time to think about where your food comes from and what environmental impacts are associated with all that travel? Every food kilometer can be measured by the amount of pollution emitted in getting our food from A to B. How does most produce get to us? Is it by plane, train, boat, or road? What’s the relation between the food on our plate and greenhouse gas emissions worldwide? These are all questions that enter my mind and influence my everyday purchasing decisions, and maybe they can help inform yours, too.

In most of Canada we deal with a difficult growing climate that limits our agricultural output to less than 50% of other countries. During the winter months, our current food distribution system must rely on the importation of most fruits and vegetables. In most cases, our produce travels upwards of 2500km from its country of origin to get to our table. In fact, a recent study shows that for an average Canadian meal, food has travelled roughly 3000km. This number may be higher during the winter months when less produce can be grown locally. We consume food that has been harvested early and packaged for the journey. And once produce has been harvested, it begins to slowly lose its nutritional value and even its taste.

In all, it’s estimated that the current global food supply chain is responsible for more than 50% percent of all greenhouse gas emissions. Simply put, something has to change. Luckily, a major part of the problem rests in how food gets to us, and we have both the technology and know-how to seriously disrupt the current model.

Independent of climate, we can grow our produce indoors, vertically, while protecting it against harsh weather and pests, and while saving resources like land, soil, and water. And what’s more, we can virtually eliminate the concept of food travel. At Nutritower, we estimate that one tower can save over one million food kilometers of travel each year. So next time you sit down for a meal, take a second to think about where your food is coming from. Because in most cases, there’s a way to grow it closer to home, while maintaining its nutrient density and its flavour, and while simultaneously making the world a better place.

What I learned about Food Insecurity

I work for a company that believes blogs are an important tool in telling our customers and friends what we do, what we stand for, and what we believe in. Never having written a blog before, I volunteered to do my part and write one. How hard could it be? The topic they gave me was Food Insecurity in Canada.

Uh Oh.

I’m a 57 year old man who was born and raised in a large city in Canada. What in the world do I know about food insecurity? Not liking what Mom made for dinner is not food insecurity. Opening a fridge door and saying “there’s nothing to eat (when the fridge is full)” is not food insecurity. I did not grow up poor (or rich, for that matter), and there was always food on the table even if it was food I didn’t like.

So I started by researching as much as I could to learn about this topic and with every blog I read, every advocacy website I visited, and every person involved in addressing this problem that I talked to I became more and more appalled.

How is it even possible that 1 in 6 children in our country go hungry every single day? It feels so un-Canadian (and I’m a deeply proud and patriotic Canadian).

Some provinces don’t even measure food insecurity (if you don’t measure it, it’s not really a problem, right?), but among those that do, the LOWEST rate of food insecurity by province still exceeds 10% of households. And when we look north, far north, the number is a mind boggling 47%. Over 60% of children in Nunavut live in food insecure households. 60%!!!!!

So what can I do? What can anyone do?

In my case I joined Nutritower. Yes, it’s a business, but that’s not why I signed up. I wanted to be surrounded by people, most of them half my age, who truly and profoundly believe they can change the world. I thrive on their passion and am humbled by their lofty goals. I sign petitions. I’m learning where political candidates in my riding stand on the issue and I vote for them. I “share” messages from advocacy groups on Facebook. I “like” their initiatives. We go to schools and educate children. I’m growing my own food which I’ll happily give away.

I’m trying. Not as much as many others, but I’m trying.

Maybe we can’t change the world, but we can try to change a world. One voice makes a difference. Ten voices make a difference, a thousand voices make a difference. But a million voices make change. I’m going to be one of those voices.

Our top five indoor winter crops for your indoor garden!

If you live in a northern climate like here in Montreal, figuring out what to grow during the winter may be a challenge. That’s why we’ve put together a top five list for you! These plants are all pretty easy, low maintenance indoor crops. These plants are comfortable in low light and in a cool climate making them ideal for a winter garden, even if you don’t have a south-facing window for optimal sunlight.

1) Lettuce

As we like to say around here: Let us eat Lettuce! It’s very easy to grow this leafy green indoor during the winter. Lettuce prefers cooler weather and does not need a tremendous amount of light to get going. A sunny windowsill can often do the trick.

Remember, not all lettuce is equal. The cos (romaine) family tend to contain higher amounts of nutrients than some of the ‘iceberg’ varieties. Other leafy lettuce varieties are fun to grow and come in a wide range of color and shape! One of our favorites is Deer Tongue – Try it out!!

You can plant them thick to grow micro-greens that can be harvested every couple of days or spread them out (4 per square foot) to let them grow full sized. Here is a suggestion for a great little system to grow micro-greens indoors: Grow light garden, otherwise, the NutriTower grows lettuce with ease and will keep your plants going for months before they need to be replaced!

2) Parsley

Parsley is a great herb to grow during the winter time. We’ve picked this herb due to it’s unusually high health benefits. It’s packed with Vitamin K, C, A, folate and iron to name a few and has been know to help promote optimal kidney function. It can be used as a main ingredient in Tabbouleh, added to a green smoothie or sprinkled on as a garnish.

To grow: spread seeds a few inches apart and keep warm until germinated. Keep in a sunny spot and water every other day. Make sure that the soil remains moist but not soggy.

3) Mint

Mint is one of the easiest plant to grow indoors since it does not need direct sunlight to thrive. Mint is a great additive to salads, shakes or drinks and a little goes a long way. Keep this plant around so you don’t need to dash out to the grocery store the next time you’re craving a mojito as a reminder that summer will eventually return.

To grow: you can transplant mint from outside containers or plant from seed. Make sure that the soil does not dry out or get too soggy. It is also recommended to keep the humidity up around the plant either by misting between waterings or by sitting the plant on a tray of pebbles half filled with water.

4) Strawberries

Albion and other ever-bearing strawberries are especially fun to grow in the winter time! These types of plants will provide fruit during it’s entire cycle and they are delicious as a bonus.

How to grow: plant seeds on top of soil and sprinkle with a mixture of 1 part water 2 parts hydrogen peroxide. This will help the seeds germinate a little faster. once sprouted, thin seeds so that there is one plant every 6 square inches or so. Keep soil moist but not soggy and do not let dry out. Strawberries also need a warm sunny spot to fruit so a sunny windowsill is ideal.

5) Kale

Kale is one of those super-foods that has become a big part of a healthy diet in recent years. It is a very hardy cruciferous plant that can grow in conditions that would be difficult for other plants. Low light and cold? No problem for this plant from the brassica family.

How to grow: In a large pot, plant 4 seeds per square foot to maximize plant density. Keep soil warm and moist until germinated, then transfer to a cool spot in the house. Direct sunlight is not a must, but will help speed up the growth rate.

A few pointers:

If growing in soil, be very selective about the soil mix you use. This will make a big difference when growing in pots. Our friends at urban seedling have an awesome soil mix available, or you can blend your own. Make sure that the mix drains well but also retains moisture to ensure optimal growing conditions.

Where to buy seeds? The quality of the seeds you will use is very important. We recommend West Coast Seeds as they provide high quality organic and heirloom varieties that we love.

Although gardening indoors does provide the ideal environment for plants, the lack of predators means that pest can spread in a flash. Keep this in mind while setting up and starting your indoor garden. Cleanliness is a top priority and being vigilant and informed about proper maintenance is a crucial part of success. We will cover this more in depth in a separate article. Don’t let this discourage you! With a little knowledge, you’ll be able to recognize the signs of trouble with ample time to apply the right counter measures to avoid potential problems.

Bonus suggestion!

If you have a wall that gets sun for a part of the day but remains warm throughout, you can try your hand at growing climbing peas and beans! all you need is a planter and some form of trellis for them to climb on. Simply plant your seeds about 3 to 6 inches apart and water. Within a few days you’ll have plants reaching for the sky. Within a few weeks, you’ll be harvesting delicious peas and beans for your stir-fry or simply to have on hand as a healthy snack for the kids! The heat from the wall will be enough to stimulate vigorous growth since they don’t need a whole lot of direct light. FYI peas and beans can self-pollinate, which makes them a good first attempt at a flowering indoor food plant.

Nutritower in Kitchen Area

WHERE TO PLACE YOUR TOWER

Your nutritower can go virtually anywhere indoors, but we love having ours in the kitchen. Not only does it brighten up the space, it actually makes it easier to add fresh ingredients to each meal. With all that said, placing your tower by a window never hurts. While the nutritower has built in lighting that, extra light will never hurt your plants.

HOW TO GET THE MOST OUT OF YOUR TOWER

The best gift you can give your plants is: consistency. Big shifts in temperature, watering, air quality or light never help their growth. Keeping your plants as stress-free as possible is the best way to ensure great outcomes.

WHAT TO PLANT FIRST

The Nutritower can grow a wide variety of fruits and vegetables — that said, some are much easier to grow than others. We recommend you start with leafy greens and herbs, as they’ll be the simplest and most rewarding to grow first. Lettuce will often go from from seed to harvest in under 45 days. All fruiting plants (like strawberries, tomatoes, etc) are a little more time consuming, and are thus better suited for those that have gotten accustomed to their nutritowers.

BE PATIENT AND HAVE FUN!

Hydroponic gardening is pretty straightforward. But just like anything new thing, there is a bit of a learning curve. Having fun with it and being ok with making mistakes is all part of the experience. We will do our best to make sure you become a master as quickly as possible.

Setting up Nutritower

How long does it take to grow food?

This depends on a few things. First of all, lettuce will be harvested much faster than tomatoes — 40 to 50 days versus 75 to 100 days. A little less obvious is that most cultivars are bred for different things. There are types of lettuce, for example, that are bred specifically for something like the Nutritower and can make a difference in yielding a crop in 25 days vs 60 days in a different type. We are constantly testing out new varieties for you to experiment with to help you maximize your yields.

How long does the Nutritower take to set up?

Setting up your Nutritower takes about 2.5 hours. It is best accomplished with a partner and is about as hard as assembling a piece of ikea furniture. We’ve prepared a range of Nutritower tutorial videos that’ll help you figure out what to do in no time.

I’m leaving on vacation, will my plants survive?

Your plants can survive in the nutritower for up to two weeks without any attendance. We recommend you set the timer for the watering mechanism to run for about a minute every 4 hours and set the night time function to turn the watering off while the lights are off. If you are leaving for longer, it may be a good idea to simply have someone come and top up the reservoir with fresh water.
