Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 2 large eggs. 1/2 cup unsalted butter, melted and cooled. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt. Zest of 1 lemon. Confectioners' sugar, for dusting.
Instructions: Preheat the oven to 350F 175C and grease the madeleine molds with butter or non-stick spray. In a bowl, whisk the eggs and granulated sugar until light and fluffy, about 2 minutes. Add the melted butter and vanilla extract to the egg mixture and mix well. In a separate bowl, combine the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the lemon zest for added flavor. Spoon the batter into the prepared madeleine molds, filling each about 3/4 full. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers spring back when touched. Remove from the oven and let the madeleines cool in the molds for a few minutes before transferring to a wire rack to cool completely.
