I prefer using honey to sugar as a sweetener in general, so I'm trying my hand at some honey infusions. On the left is a local raw honey with cinnamon, allspice, and clove. The right is a clover honey with vanilla. After a lot of thinking about the nature of the classic and it's variants, I came to the conclusion that the core principles were important: equal parts, gin, and Chartreuse. Here's my submission. Demolished in 1930, the facade still stands. Perry & Reed were the architects behind it's design.
