My first "big" batch turned out pretty well this morning, I may try 8 loaves next week. It's a good time of year to give lots of bread away :)
Sourdough bake Oct. 17-18/20
This week I tried the pre-cooked flour method from The Perfect Loaf (@Maurizio on Instagram).
Part of the flour is cooked like a roux with milk before being added to the mix. There is also olive oil and some honey (I used brown sugar) in there, resulting in a very soft and fluffy sandwich loaf.
Sourdough bake Aug. 8-9/20
Baked with my two loaf tin method again this week with great results, be sure to try it out sometime! I proofed the "long" loaf overnight in a parchment-lined tin and transferred it to a preheated tin and scored it without even flipping it over (seam side up).
Sourdough bake July 25-26/20
I stopped posting for a while because I've just been baking the same thing each week. But this week I baked a loaf in a loaf tin and it worked out nicely. I proofed it in a parchment-lined tin, then, to bake, transferred it to another preheated tin with an inverted tin on top to trap the steam. I think I'll do this again as the slices are great for sandwiches ☺️
Sourdough bake May 30-31/20
A couple lovely loaves this week - pumped up the rye content to 10% and it's working out really nicely!
Sourdough bake May 23-24/20
I increased the rye flour to 10% this week. The dough was stickier but still manageable. These came out very high and round ☺️
Sourdough bake May 16-17/20
Tried 5% light rye this week. Couldn't really taste it so I'll try more next time. I also reduce the water to 70% from 75% to see if it would handle better and it was good.
Sourdough bake May 9-10/20
I got to try some bread flour for the first time this week and got some nice results! I think the bread is slightly chewier and it was nice to handle.
Sourdough bake April 24-25/20
I ran out of AP flour so these guys are all whole wheat (red Fife and Prairie hard red). They're on the flat side but pretty tasty. It was also colder in my kitchen this week so that might have contributed to the flatness as well 🤔

A little bit in the flat side this week, maybe due to shaping? Tried to score with a bunny and a chick to varying degrees of success :)
Just cut open the second loaf from last Friday and was pretty happy with it 🤓

All-purpose flour and red Fife in these boys today. I tried a slightly different folding technique that seemed to make no difference, haha!

Not a bad bake this week but they came out a little on the flat side... overprooved maybe?

Welp, I've got more time to bake at home now so here's an unusual Friday bake. I tried to make a couple of leaf designs in honour of Animal Crossing day 😊
I've switched to making two smaller loaves instead of a large one for freshness; I like the smaller slice size too.
