GRAIN FREE CHOCOLATE GRANOLA. My first attempt st a recipe from @madeleine_shaw_ #gettheglow Just waiting for it to cool :)
So...
Yesterday and today were not great days, I didn't binge or anything but I also did not make the best choices for my main meals because I ate out both nights. Nandos and Chinese 😯 I did try to make the most healthiest choices on the menu but I cant pretend like I was a saint when I wasn't. Ever day is a learning curve and the weekends are killing me right now, but I have some things to try out in the upcoming week that hopefully will see me settle into a lifestyle that I can continue forward after this challenge. I'm starting to see results already, clothes are fitting better, I have more energy and motivation to do things. I know I'm going in the right direction and right now it's just knowing that the bumps along the way don't have to throw me off course.
I need me one of these bad boys. A Hemsley + Hemsley spiralizer. Maybe my lovely bf might just happen on this post and get me one from right over here… http://www.hemsleyandhemsley.com/spiralizer-our-recommended-spiralizer-for-our-favourite-courgette-dishes-and-more/
Went on a 3hr hike in East Lothian today and here's what my FitBit has to say about it. #cleanknackered #100healthydays
My food bibles for the forseeable future and beyond. #hemsleyhemsley #ameliafreer
And I’m donnnne-nope.
I'm determined to perfect the burpee.
Day Seven and Eight.
It’s been busy couple of days there between deliveries at work, store visits and general up keep and maintenance, I have barely had time to stop. The positive is my FitBit has had a good battering and I’ve exceeded all my daily targets by huge amounts in the last few days.
My Hemsley + Helmsley, The Art of Eating Well cookbook arrived this morning so I’m super excited to have a proper look at that this weekend and hopefully do some meal prep for next week. Also, I was in WHSmith today and saw Amelia Freer’s, Eat.Nourish.Glow. book which isn’t just a recipe book, but instead sets out 10 easy steps for giving your diet a complete overhaul with a few recipes to help boost success. I decided I had to have it so picked it up, at a reduced price, and have nearly made my way through more than a 1/3 of it already. It really has been quite an eye opening read and makes things look easy. Anyway, those are my food bibles for the next 90 days, and beyond, and I’ll be sure to post any useful, hints, tips or recipes they may send up.
Dessert.
My fruit infuser water bottle arrived, still no cookbook. #100healthydays 🍋🍋🍋
Delivery day mega madness.
Way too excited for my Hemsley Hemsley cookbook arriving. Hopefully tomorrow!
DAY FIVE AND SIX.
Realised that I forgot to post yesterday in the midst of all my recipe mania. It was a good day, I kept myself busy with loads of meal and snack prep which meant that today I wasn't caught out with no lunch. Today I felt good.
Lunch, trying to keep fuller for longer. #100healthydays
Recipe: Chocolate Hazelnut Bliss Balls.
INGREDIENTS 220g roasted hazelnuts. 12 dates. 2 tablespoons raw cacao powder 1 tablespoon coconut oil 3tbsp acacia honey or sweet freedom 1 teaspoon vanilla extract A pinch of salt 3 squares dark chocolate (you should use over 70% cocoa solids) METHOD 1. Place 3/4 of the hazelnuts in a food processor and pulse until they’re very finely chopped, almost powder like, but I prefer to keep a bit of the crunch and texture. Add the rest of the ingredients (except the dark chocolate and the rest of nuts) and pulse until everything is well combined. 2. Refrigerate for 15-30 minutes so the mixture is easier to work with. 3. While the mixture cools you can prepare the coating/topping. Remember to keep 28 hazelnuts back as I like to put a whole nut in the middle. Simply chop the rest of the hazel nuts and the dark chocolate – do this by hand so it doesn’t get chopped too finely, it’s good with some crunch. 4. Take a whole hazelnut and form the mixture into balls around it and roll them into the chopped dark chocolate & hazelnuts and press them to make sure the topping sticks. 5. Store them in the fridge or some people even like them from the freezer!
Recipe: Mini Crustless Quiche.
INGREDIENTS 6 eggs. 100g quark (or fat free natural cottage cheese). Fillings of your choice, I usually pick ham, mushroom, pepper and onion. 1tsp wholegrain mustard (optional) 28g parmesan or strong cheddar. Cooking spray. Salt and pepper. METHOD 1. Heat the oven to 180ºC and spray a 12-hole muffin tin with cooking spray. Or I sometimes make them into bun cases if I'm still worried they might stick. 2. Beat the eggs with the quark and salt and pepper. 3. Prepare your fillings by chopping into fairly small pieces (so they cook in the time allowed.) Again you can precook them briefly in the frying pan if you would prefer this method. 4. Distribute the fillings between the muffin tin compartments and pour over the egg mixture. 5. Sprinkle some cheese on top of each quiche. 6. Bake in the oven for approximately 20 minutes or until the mixture is cooked and light golden brown
Just a little interruption...
