So we've got: Munch x Fin, Casey x Alex, and Elliot x Olivia 🤟

I think both of them act as if Valentine's day isn't a big deal, very unbothered to do anything, teasing others who make big plans, and Munch in particular goes on a rant about how it's just an excuse for corporations to make money. People around them assume they're both uninterested in celebrating... But oh no, they're actually both quite corny and wanting to celebrate, and are definitely worrying the other doesn't care because that's the general message they've been telling each other 🤦
Fin's way more corny than he wants people to know. Munch is probably more cynical, but that's mostly due to 4 ex wives. Fin never felt all that comfortable being lovey-dovey and corny, with the exception of his first wife, sort of. Even then, it was sparingly. He never forgot anniversaries though, or birthdays, he enjoyed random tokens of affection, all of that, but his wife just wasn't that lovey-dovey either outside of physical affection behind closed doors. With Munch they thrive on banter and teasing, riling one another up, and then being as touchy as humanly possibly behind the scenes. For Valentine's day though...Fin wants to go on a legitimate date (For context: I'm kind of describing their first Valentine's day together as a couple). He loves John, and he wants to be able to love him openly and proudly. They don't hide their relationship necessarily (not anymore - again, going off the assumption it's when they're officially together and openly out and people know they're dating), but they're just private, set in their ways. Munch likes the restaurants he likes, he likes getting home for a nap, he likes staying in to read, he's become a creature of comfort in his "old" age. Fin likes the relaxation side of those things, the lack of worrying and ability to be lazy in between such a hectic job, but he can't deny that he wants to be seen with Munch and show the world he loves him... So why not Valentine's day?
So he plans a very VERY nice date at a VERY expensive restaurant, and he surprises Munch. After a day of work (let's say Fin managed to get him and Munch half a day by pulling some strings and begging Cragen), Fin goes to Munch's place with the idea in mind to watch movies together. However, he asks Munch to go get him something from the store, and Munch sulks a little before relenting and going. When he gets back, Fin is dressed up in his living room, absolutely STUNNING✨ And he has a brand new suit picked out for Munch laying on his bed. They're going out for an early-ish dinner, where Fin plans to buy stupidly expensive champagne and listen to Munch complain about the price despite happily drinking it, before taking him home to absolutely RAVISH him like they're first time lovers again - and maybe he'll even let Munch top, as a treat 😉 Munch is blown away, and OH he's red as a tomato and so in love... He actually also bought Fin something really nice like an expensive watch or some really fancy cologne, something he knew Fin had been wanting for a while but kept putting off because of money, so he gives it to him before dinner. HONESTLY THEY'RE JUST SO IN LOVE and it's like... They don't generally express it so out in the open without a silly insult or sex attached, so getting to hold hands across from one another, to kiss in public, to just be a couple, it's everything ❤️ and then obviously they do in fact have sex like a couple of rabbits 😎🤟

Aaaaaah I don't talk about the gay gals often 😘 So Casey for sure is a romantic, though similarly to Fin and Munch, she prefers to keep that stuff a secret, and plays it up that she's Too Cool for Love™. Alex on the other hand is quite happy being openly affectionate and she's also a planner, so like a month before Valentine's day she asks Casey if she wants to do anything nice, and Casey is like "uuuuuuuuuuuuuuuh sure babe" while on the inside she's freaking out because SHOULD SHE HAVE PLANNED SOMETHING ALREADY?! She has so many panicking conversations with Elliot trying to figure out what to do, while Elliot is like "If she asked you, maybe she's already planned something" and Casey is just "NOOOOOOO THEN WHAT DO I DO FOR HER?!?!"
And well yes Alex does have a plan but she's not really the type to plan a surprise so she just... Tells Casey. No mystery. She walks up to her at the precinct one day and is like "I was thinking we could go see a Broadway show" and lists a bunch, and Casey just responds she'll see whatever Alex likes best, and Alex is like "Okay :))" and is very unaware Casey is freaking out.
(Going off the assumption again this is their first Valentine's day as a couple - Casey is a very anxious person when it comes to relationships, and especially Alex. Her only serious relationship was with her ex fiancé and it'd been hard getting back into the dating world after him, so she's delayed dating for a long time. But then Alex comes around, back in the picture, and it's like love at first sight. She adores Alex, she thinks she's everything, and she doesn't want any of her insecurities to mess things up. She's definitely over thinking, assuming she's too cold one minute, too clingy another, that she's not good enough, that she's too relaxed, too damaged, too work orientated - so on, and so forth. But Alex doesn't have any issues with Casey in terms of their relationship. She thinks she's sweet, funny, a little bitchy in the funniest sense, she's strong, and even when Casey seems neurotic or anxious, Alex can't imagine not wanting her 😘)
So yeah, they go to see a show together (idk if Broadway is actually anywhere near where they are in New York - I'm English so uuuuuuh our country is teeny tiny and a trip to the West end is pretty easy, I'm naively assuming the same for Broadway), and they both dress up very sexy, and they hold hands and then afterwards Casey asks if she'll stay the night and surprises Alex with a huge bouquet of roses, and she'd bought so much bath stuff so she can run Alex a very lavish bath (they can bath together 😉), and then... THEY HAVE LESBIAN SEX 😎 I think Casey typically tops more on average but that night Alex insists on taking charge 😏

Okay so...I'm going to answer this under the idea that 1. They're officially dating as an established couple that people know about, 2. It's their first Valentine's day as a couple (maybe during the friends with benefits era it happened over Valentine's day but this is the first as boyfriend x girlfriend), and 3...Elliot is not pregnant. "SVU: mpreg edition" Valentine's day would be different, probably...
RIGHT 👏 It's a big deal for them. This is YEEEAAAAAARS in the waiting, A LOVE STORY THAT'S BEEN BREWING FOR SO LONG, ELLIOT WANTS TO DO SOMETHING EXTRAVAGANT TO MAKE A POINT...
Except turns out Kathy actually has a date and she asks Elliot to have the kids that weekend before he gets a chance to ask her 🤦
Which isn't a big deal, really. Kinda puts a dent in any SEXY plans he had, but none of the kids are super young anymore. Maureen has a date herself, and Kathleen is old enough to watch the twins (hell, the twins are almost old enough not to need a babysitter, but it's just comfort of mind assigning Kathleen to babysitter duty). He talks to Kathy about it first, just to be transparent, because if it's his weekend to watch them, it'd probably seem shitty to abandon them and her be unaware. And Kathy's fine with it, he's not leaving them alone the whole day or anything. So yeah, HE CAN'T DO ANYTHING STUPIDLY CRAZY ROMANTIC, BUT HE CAN STILL MAKE SOME PLANS 👌
And Elliot is FOR SURE a corn-ball romantic. His brain is a bit more scattered, he's not quite the master of organisation like Fin or Alex, but he's got the passion to want something grand. And it's OLIVIA, he has to do something to make a point... But Olivia isn't really an over the top lovey-dovey girl. She likes romance sure, and she's definitely a sucker for Elliot, but she doesn't need any big gestures or expensive gifts. She's just happy to spend time with him...
ALL THE SAME, YA BOI HAS A PLAN! He knows Olivia likes nice dinners, so booking a fancy restaurant is a given, but he wants to spoil her, so he books for her to have a spa trip that morning with Maureen and Kathleen while he's home with the twins (I like to think the kids love Olivia's company when they date, and I think it's cute the idea they'd spend time with her). He did talk with her first to check she was okay to go with the girls too, and obviously Olivia loves the idea (Originally it was just Maureen, as a mini gift for her before HER date too, but Kathleen was upset to be left out so... Yeah). Afterwards, Olivia drops the girls off at his and she thinks she's about to go home and get ready and Elliot is like "Wait, but you've got makeup here, right? You can get ready here" and she points out he doesn't have any of her fancy clothes to get dressed up...
FOOLISH OLIVIA, You see, Elliot may have mentioned planning to Fin in passing, and Fin told him about his thing with Munch, and suggested Elliot buy Olivia a dress as a surprise. Elliot is like "I...don't know her size 👁️👁️" (more accurately, he doesn't know the EXACTS, he could buy her a top off the rack easy, but a fitted dress he'd have no clue), and Fin is like "I got you" and finds a dress online to show him and then checks with Alex that he got the right size, and Alex asks "How do you know Olivia's measurements?" and Fin is like "I've a good eye" (reality is he probably just remembers from a conversation he had with her way back when, or from when he helped her change during an undercover job). So yeah, Elliot reveals to Olivia that he bought her a dress especially for their date and OOOOOOOOH it's very sexy and fancy, and Olivia is AMAZED 😱 Elliot will tell her at a later point that Fin helped, but he definitely enjoys the initial praise of doing such a good job 😇
And so they go out to a nice restaurant - it's a little posh, a little expensive, but it's definitely not SUPER posh or anything. They have a nice time, they get home at a reasonable hour, spend some time watching late night movies with the kids, waiting for Maureen to get home, and then when the mini-Stabler's go to bed, they make out on the couch like a couple of horny teenagers 😎 Sex wise, they don't smash THAT evening. They definitely get a little hot and heavy, and hands wander, but that's about it. HOWEVER, when the kids go back to Kathy's a few days later, Elliot stays over at Olivia's and she reveals she bought some new toys especially for them to celebrate their first Valentine's day together 😏💕💖 (#ItsPeggingTime)

Everyone has a nice day. Fin and Munch have the flashy surprise, Casey and Alex enjoy something a little more out there, and Olivia and Elliot enjoy something a little domestic 😍💕 But what they have in common? They all end up fucking 👏
