This beauty is considered a noxious weed in Minnesota because it pops up everywhere in lawns and gardens. But did you know Purslane is actually a superfood? It contains loads of omega-3 fatty acids, zinc, phosphorus, manganese, calcium, copper, and is a fabulous source of vitamin A. It has loads of medicinal benefits too! Oh! And it is delicious!
