My answer to this question is going to be a little long sorry T_T)
I think World, Rise and Wilds are all pretty decent starting points!
They're all very different in their own way, but World and Rise go on sale for really cheap quite often so I think it's worth trying out both to see what clicks. If you enjoy a more grounded setting and combat, you might jive with World. If you prefer something a little more fantastical, less grounded with combat that's customisable, I'd say try out Rise first!
Wilds is a pretty cool mix of both World's grounded setting with some fast paced/flashy combat key to Rise. It also has a way more involved story (voiced protagonist hunter, more involved cutscenes etc.) so if that sounds like your thing, it also wouldn't be bad to start on. Wilds also has cross platform multiplayer so it's easier to play with friends/other people.
If setting also matters to you, World and Wilds have pretty similar types of story involving the Guild and the hunter being placed in some kind of undiscovered land etc. quelling threats that may be a danger to the ecosystem. Whereas Rise's base story is set in a Japan inspired setting and then the expansion for it, moves to a medieval European kinda setting with knights and stuff.
Generations Ultimate is pretty much the only more accessible older generation game (outdated 3ds graphics and such) but was a celebration title so the story/worldbuilding is not as coherent and grounded as the other games but the combat is heaps fun and it gives you a bit of a light dip into how older gen games might feel. If you can give this a shot eventually, I'd recommend it too! Unfortunately it is a switch exclusive though.
I hope you find something you end up liking! Something to keep in mind is that the newer you start, it might be a little difficult to go backwards because each generation got more and more quality of life changes, got easier/more forgiving etc. Each game feels really different, so I hope you don't give up too soon if something doesn't hit right away!
(Also if the tutorials and controls they throw at you are confusing, don't be ashamed to look up a video tutorial on how to use the weapon you end up picking up gahaha the in-game tutorials aren't super great)
