Overnight Oats
* I took the photo before stirring the oats :) Helen's Comments: I'm finding this to be such a great breakfast, very nutritious and keeps us full for long. We have it 3 to 4 times a week. There are so many different flavors to try and experiment with that it doesn't really get boring. I listed a few flavor ideas below but you can come up with your own too. (If you do, you should list them in the comments section of this post).Â
You will notice that I use almond milk. I'm not sure if you can get this in South Africa but I do know that you can make it (if you are feeling adventurous). Here is a recipe I found for that:Â http://frugallysustainable.com/2012/08/how-to-make-homemade-almond-milk/
Otherwise, you can just use normal milk and perhaps add some almonds or other nuts to the oats.Â
Ingredients: 1/2 cup raw oats (I use 1/4 cup whole rolled and 1/4 cup steel cut – this gives more texture and I think steel cut oats have a bit more fibre too) 1/3 cup plain yoghurt
1 to 2 tsp honey (or any other sweetener)
Dash of vanilla essence
1 Tbs chia seeds
1 Tbs ground flaxseeds
*Flavour of choice
Enough Almond milk (or plain milk) to fill the jar (after adding all the other ingredients first.) *Flavour Ideas:Â
Apple and cinnamon Berries and nuts Banana and peanut/almond butter Peach Apricot and ginger Pineapple and coconut Orange
Directions:Â
Put all the ingredients into a mason jar. (The jars I use are pint size which is almost 500ml.) I add them in the order listed above but I don't think it really matters. I add the almond milk last and just fill the jar full with it. Stir ingredients well, put lid on and place in fridge overnight (or for 3 hours). Enjoy cold the next morning :)
